CURSOR: hand; HEIGHT: 240px\" alt=\"\" src=\"http:\/\/1.bp.blogspot.com\/_xdnxgKcsXfw\/S_m6BTA4t9I\/AAAAAAAAFl4\/QZB9ZPLefB4\/s320\/041+-+Vidalia+(3).JPG\" border=\"0\" \/><\/noscript><\/a><\/span><\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\"><\/span> <\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\">\u2026I\u2019ll admit it, when I was originally planning my trip to Washington DC Vidalia was not on my dinner list \u2013 it was penciled in as a potential lunch.<span style=\"mso-spacerun: yes\">  <\/span>Of course I\u2019d heard of RJ Cooper \u2013 a Beard Award winner in 2007 who grew up just up the road from my childhood home in Northwest Ohio \u2013 it\u2019s just that DC\u2019s dining scene seemed so dynamic that I couldn\u2019t commit to a \u201cclassy southern\u201d restaurant, no matter how good their Pecan Pie supposedly was.<span style=\"mso-spacerun: yes\">  <\/span>Obviously my opinion was swayed when I heard about Cooper\u2019s newest project, though \u2013 a 24 course chef\u2019s tasting menu presented by Cooper to 8 lucky guests each Friday and Saturday.<\/span><\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\"><\/span> <\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\"><a href=\"http:\/\/2.bp.blogspot.com\/_xdnxgKcsXfw\/S_m6BknkMsI\/AAAAAAAAFmA\/RQhrAHYCL68\/s1600\/043+-+Vidalia+24+Table+setup+(6).JPG\"><img decoding=\"async\" id=\"BLOGGER_PHOTO_ID_5474611358217810626\" style=\"WIDTH: 240px; CURSOR: hand; HEIGHT: 320px\" alt=\"\" src=\"http:\/\/2.bp.blogspot.com\/_xdnxgKcsXfw\/S_m6BknkMsI\/AAAAAAAAFmA\/RQhrAHYCL68\/s320\/043+-+Vidalia+24+Table+setup+(6).JPG\" border=\"0\" \/><\/noscript><\/a><\/span><\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\">\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\">By the chef\u2019s own accord the idea to start Vidalia 24 was based on what Chef Bryan Voltaggio is doing up at Volt\u2019s Table 21 in Frederick \u2013 he noted that Voltaggio blew him away with a few dishes and he felt the need to do something equally innovative\u2026not particularly to \u201cone up\u201d Volt, but rather to show his culinary skills and to provide diners with a unique experience.<span style=\"mso-spacerun: yes\">  <\/span>Having experienced Volt Table 21 only 6 days after Vidalia 24 there are notable differences; at Volt you are in the kitchen while at Vidalia you are in the bar, at Volt Bryan introduces himself but largely allows his team to handle the cooking and plating while at Vidalia RJ works with a single additional chef and does everything from cooking to plating to describing the dishes for himself, at Volt things feel formal while at Vidalia the atmosphere is one of eating in your friend\u2019s kitchen \u2013 if your friend is a humorous and down to earth Beard Award winning chef willing to discuss everything from his children to his dislike of The Buckeyes to the EMP after party to his opinions of everyone from Daniel Boulud to Thomas Keller to Grant Achatz to the stars of the DC dining scene.<span style=\"mso-spacerun: yes\">  <\/span>An additional difference \u2013 at Vidalia 24 copious wine pairings are included for $150 (or non-alcoholic pairings for $120) while at Volt Table 21 there is no included pairing and they charge for non-alcoholic beverages.<\/span><\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\"><\/span> <\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\"><a href=\"http:\/\/1.bp.blogspot.com\/_xdnxgKcsXfw\/S_m6B7VuzjI\/AAAAAAAAFmI\/lDmqPD-PIoc\/s1600\/043+-+Vidalia+24+Table+setup+(3).JPG\"><img decoding=\"async\" id=\"BLOGGER_PHOTO_ID_5474611364317023794\" style=\"WIDTH: 320px; CURSOR: hand; HEIGHT: 240px\" alt=\"\" src=\"http:\/\/1.bp.blogspot.com\/_xdnxgKcsXfw\/S_m6Csa_WHI\/AAAAAAAAFmQ\/2tZeaSlYzBQ\/s320\/043+-+Vidalia+24+Table+setup+(7).JPG\" border=\"0\" \/><\/noscript><\/a><\/span><\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\">\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\">Without further discussion of service (top notch) or comparison to other DC tables I will note that the crowd at Vidalia 24 consisted of two groups of three (mother, father, and son in both cases) plus myself \u2013 all of us experienced diners who engaged readily with Chef Cooper about our experiences and listened intently as he described his.<span style=\"mso-spacerun: yes\">  <\/span>Seated at 7:30 our water was filled (Voss Sparkling and Fiji Still) and drink pairings began \u2013 champagne for the drinkers and a delightful Passionfruit soda for myself \u2013 each drink presented and poured by sommelier Ed Jenks.<span style=\"mso-spacerun: yes\">  <\/span>With a total of 8 alcoholic beverages (and 4 non-alcoholic drinks) poured during the course of the meal I will note that conversation became much more lively as the night progressed \u2013 but even with the noise and music from the bar the noise level was never problematic \u2013 if anything it added to the experience.<\/span><\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\"><\/span> <\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\"><a href=\"http:\/\/2.bp.blogspot.com\/_xdnxgKcsXfw\/S_m6CzmHNTI\/AAAAAAAAFmY\/75cqJtTVR0M\/s1600\/045+-+Passionfruit+soda.JPG\"><img decoding=\"async\" id=\"BLOGGER_PHOTO_ID_5474611379418117426\" style=\"WIDTH: 240px; Sterling Caviar-Egg-Cr\u00e8me Fraiche.<span style=\"mso-spacerun: yes\">  <\/span>Featuring the salty fish roe sitting alongside a \u201c<span lang=\"EN\" style=\"mso-ansi-language: EN\">pappardelle\u201d of egg, cream, and butter the classic flavors are paired with a lemony emulsion, chive, and a toast point.<span style=\"mso-spacerun: yes\">  <\/span>Elegant and potent yet attractive and balanced the dish provides a smooth opening to the menu and a glimpse of the type of creative whimsy with classic flavors that dominates much of the 24 course experience.<\/span><\/span><\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\"><span lang=\"EN\" style=\"mso-ansi-language: EN\"><\/span><\/span> <\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\"><span lang=\"EN\" style=\"mso-ansi-language: EN\"><a href=\"http:\/\/4.bp.blogspot.com\/_xdnxgKcsXfw\/S_m7sGzwmRI\/AAAAAAAAFmg\/0n2QLqWgVu8\/s1600\/046+-+Sterling+Caviar-Egg-Cr%C3%A8me+Fraiche-Brioche+Chip.JPG\"><img decoding=\"async\" id=\"BLOGGER_PHOTO_ID_5474613188461893906\" style=\"WIDTH: 320px; CURSOR: hand; HEIGHT: 240px\" alt=\"\" src=\"http:\/\/4.bp.blogspot.com\/_xdnxgKcsXfw\/S_m7shJ6GvI\/AAAAAAAAFmw\/sHC8jV6bVIg\/s320\/048+-+Beef+Heart-Jalapeno-Pickled+Radish+(1).JPG\" border=\"0\" \/><\/noscript><\/a><\/span><\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\">\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\">Almost as if sensing the need to temper the heat the followup dish to the beef heart was entitled Distillation-Tiki, a liquid nitrogen preparation of strawberry and yogurt that tasted like a daiquiri and left each diner blowing smoke from his\/her nostrils a la the Dragon Popcorn at minibar or the Scallop at Moto.<\/span><\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\"><\/span> <\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\"><a href=\"http:\/\/4.bp.blogspot.com\/_xdnxgKcsXfw\/S_m7s44Z5vI\/AAAAAAAAFm4\/db0M-bqStBM\/s1600\/049+-+Distillation-Tiki+(strawberry+frozen+yogurt).JPG\"><img decoding=\"async\" id=\"BLOGGER_PHOTO_ID_5474613201903150834\" style=\"WIDTH: 320px; CURSOR: hand; HEIGHT: 240px\" alt=\"\" src=\"http:\/\/4.bp.blogspot.com\/_xdnxgKcsXfw\/S_m7s44Z5vI\/AAAAAAAAFm4\/db0M-bqStBM\/s320\/049+-+Distillation-Tiki+(strawberry+frozen+yogurt).JPG\" border=\"0\" \/><\/noscript><\/a><\/span><\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\">\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\">Moving back to fish courses (part of what I loved about Vidalia 24 was the non-linear progression that kept surprising the palate) our fifth course was Madai -Avocado-2 Pepper Powders and featured a thin cut of Madai belly served over a creamy avocado panna cotta alongside a Madai tartare topped with a torched slice of avocado.<span style=\"mso-spacerun: yes\">  <\/span>Creamy vegetable paired with melt-in-the-mouth fish may seem to lack nuance, but in fact the overall balance of the dish was quite excellent \u2013 mild yet smoky with hints of the pepper peaking though only slightly.<\/span><\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\"><\/span> <\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\"><a href=\"http:\/\/4.bp.blogspot.com\/_xdnxgKcsXfw\/S_m7tZpDbUI\/AAAAAAAAFnA\/uay9c6tBHZI\/s1600\/050+-+Madai+-Avocado-2+Pepper+Powders+(2).JPG\"><img decoding=\"async\" id=\"BLOGGER_PHOTO_ID_5474613210697133378\" style=\"WIDTH: 240px; Squab-Blood-Rhubarb.<span style=\"mso-spacerun: yes\">  <\/span>Plated as a grilled breast of squab and a southern fried leg the meaty bird was paired with a pile of melting confit-style rhubarb, a similar B\u00e9chamel to that served with the eel, and a red drizzle that tasted not so much like blood but more like a sour balsamic \u2013 blood orange, perhaps?<span style=\"mso-spacerun: yes\">  <\/span>Once everyone got over the title the dish was a hit \u2013 it was one of my favorites of the evening.<\/span><\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\"><\/span> <\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\"><a href=\"http:\/\/2.bp.blogspot.com\/_xdnxgKcsXfw\/S_nD-LZ2VtI\/AAAAAAAAFpg\/uUGPirHidIU\/s1600\/065+-+Squab-Blood-Rhubarb.JPG\"><img decoding=\"async\" id=\"BLOGGER_PHOTO_ID_5474622295026063058\" style=\"WIDTH: 320px; CURSOR: hand; HEIGHT: 320px\" alt=\"\" src=\"http:\/\/1.bp.blogspot.com\/_xdnxgKcsXfw\/S_nIu0sORjI\/AAAAAAAAFpo\/HMJKJV3ZDL0\/s320\/066+-+Elixer-Mirepoix+(onions,+celery,+carrots).JPG\" border=\"0\" \/><\/noscript><\/a><\/span><\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\">\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\">For our savory I decided to once again give beef a try.<span style=\"mso-spacerun: yes\">  <\/span>While I\u2019m not a fan of steak or hamburger flavor or texture in general my two previous experiences with Wagyu were pleasant enough and in this case Chef Cooper was proudly touting his sourcing of the highest grade of been available in the <st1:country-region st=\"on\"><st1:place st=\"on\">United States<\/st1:place><\/st1:country-region> \u2013 A7 Wagyu.<span style=\"mso-spacerun: yes\">  <\/span>Entitled Wagyu-Morels-Favas-Potatos-Onions the dish was served as a sort of shabu-shabu with a hearty broth with notes of Morel, Onion, and Beans and potato crisps serving as the base.<span style=\"mso-spacerun: yes\">  <\/span>Dropping the marbled pink slices of beef into the broth for merely a moment I opted to first taste the meat solo and then along with the bowl\u2019s constituents.<span style=\"mso-spacerun: yes\">  <\/span>Smooth as silk and literally melting in the mouth the beef possessed the texture of toro and a sweet grassy flavor \u2013 paired with the broth the entirety of the dish was almost like a beef stew in its perfect form.<\/span><\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\"><\/span> <\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\"><a href=\"http:\/\/4.bp.blogspot.com\/_xdnxgKcsXfw\/S_nIvVhbeLI\/AAAAAAAAFpw\/eLC9ONYz8eU\/s1600\/067+-+Wagyu+%E2%80%9CA7%E2%80%9D-Morels-Favas-Potatos-Onions+(1).JPG\"><img decoding=\"async\" id=\"BLOGGER_PHOTO_ID_5474627537602312370\" style=\"WIDTH: 320px; CURSOR: hand; HEIGHT: 240px\" alt=\"\" src=\"http:\/\/1.bp.blogspot.com\/_xdnxgKcsXfw\/S_nIv3dOSwI\/AAAAAAAAFqA\/TUGAz3rKb2o\/s320\/069+-+Mango-Rum-Coke.JPG\" border=\"0\" \/><\/noscript><\/a><\/span><\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\">\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\">Our final dessert of the menu was entitled Chocolate Textures 2010 and Chef Cooper made a point of letting us know that this was his dish before <st1:city st=\"on\"><st1:place st=\"on\">Bryan<\/st1:place><\/st1:City> made it famous on the Table 21 menu at Volt.<span style=\"mso-spacerun: yes\">  <\/span>Presented beautifully the dish ran the gamut from hot to cold, crunchy to smooth, white to milk to dark to so bitter it made you wince.<span style=\"mso-spacerun: yes\">  <\/span>Having experienced the Chocolate degustation at Vidalia, The Inn at Little Washingon, Restaurant Eve, Volt, and Citronelle during my visit I\u2019ll simply say Vidalia\u2019s was only rivaled by The <st1:place st=\"on\">Inn<\/st1:place>\u2026and theirs only had three options on the plate.<\/span><\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\"><\/span> <\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\"><a href=\"http:\/\/4.bp.blogspot.com\/_xdnxgKcsXfw\/S_nIwKHkmPI\/AAAAAAAAFqI\/m9lk4qZBHEQ\/s1600\/070+-+Chocolate+Textures+2010.JPG\"><img decoding=\"async\" id=\"BLOGGER_PHOTO_ID_5474627551720937714\" style=\"WIDTH: 320px; CURSOR: hand; HEIGHT: 240px\" alt=\"\" src=\"http:\/\/1.bp.blogspot.com\/_xdnxgKcsXfw\/S_nJmCZd1PI\/AAAAAAAAFqQ\/L9Y9nK-4gbY\/s320\/071+-+Finishing+Touch+Bubblegum+Marshmallows+and+Chocolate+Chip+cookies.JPG\" border=\"0\" \/><\/noscript><\/a><\/span><\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\">\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\">Opting against coffee as it was getting quite late (11:30pm) in a day that had begun in the gym at 4am I was ready to leave when Chef Cooper decided to sit down at the table with us to chat.<span style=\"mso-spacerun: yes\">  <\/span>Jovial and pleasant despite a long day in the kitchen he shared with us more stories of his love of motorcycles and rock, his life and family, and his myriad experiences both in the kitchen and at the table in some of the world\u2019s finest restaurants \u2013 to be fair, even without the amazing food the experience of chatting with a Beard Award winning chef at such a level would have justified the $120 tab.<span style=\"mso-spacerun: yes\">  <\/span>Joking with Chef Cooper regarding a recent article in the Washington Post about their Pecan Pie I asked if really was the best in the city to which the answer was \u201cnah, its terrible\u201d followed by a short story about how long their pastry chef had been working at Vidalia and a \u201chey, pack this guy up a slice of Pecan Pie to go.\u201d<span style=\"mso-spacerun: yes\">  <\/span>Stating that this wasn\u2019t necessary he insisted \u2013 stating that it would go great with coffee in the morning.<\/span><\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\"><\/span> <\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\"><a href=\"http:\/\/4.bp.blogspot.com\/_xdnxgKcsXfw\/S_nJmYz_BWI\/AAAAAAAAFqY\/5X5No8BQ9Ww\/s1600\/072+-+Pecan+Pie+(1).JPG\"><img decoding=\"async\" id=\"BLOGGER_PHOTO_ID_5474628483378251106\" style=\"WIDTH: 320px; CURSOR: hand; HEIGHT: 240px\" alt=\"\" src=\"http:\/\/4.bp.blogspot.com\/_xdnxgKcsXfw\/S_nJmYz_BWI\/AAAAAAAAFqY\/5X5No8BQ9Ww\/s320\/072+-+Pecan+Pie+(1).JPG\" border=\"0\" \/><\/noscript><\/a><\/span><\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\">\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\">Thanking the chef and his team for the wonderful food, experience, and generosity I made my way to the street where my family awaited and while I\u2019d like to say the Pie made it to the next morning that would be a lie \u2013 with both my sister and myself rating Pecan Pie amongst our favorite desserts it was quickly consumed on arrival back at the hotel.<span style=\"mso-spacerun: yes\">  <\/span>Featuring a nearly pudding textured interior that tasted of boozy caramel paired with a buttery crisp crust and crunchy yet supple candied pecans there was no disagreement in our group with the Post \u2013 this was the best Pecan Pie that any of us had ever tasted.<span style=\"mso-spacerun: yes\">  <\/span>A beautiful ending to a fantastic day and a truly one of a kind experience.<span style=\"mso-spacerun: yes\">  <\/span>Great food with superior ingredients, a fantastic price with or without wine parings, wonderful service and a Chef who is going out of his way to please each and every guest &#8211;
