CURSOR: hand; HEIGHT: 240px\" alt=\"\" src=\"http:\/\/3.bp.blogspot.com\/_xdnxgKcsXfw\/TOhYxHk82EI\/AAAAAAAAHIg\/8glJ7HY3Now\/s320\/021%2B-%2BEverest%2B%25281%2529.JPG\" border=\"0\" \/><\/noscript><\/a><\/span><\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\"><\/span> <\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\">Next to Charlie Trotter\u2019s iconic restaurant, Everest stands as perhaps the most well known elder statesman in a dining scene dominated by cutting edge technique and \u201chyper-modern\u201d cuisine.<span style=\"mso-spacerun: yes\">  <\/span>While both styles clearly have their place in 21<sup>st<\/sup> century dining, <?xml:namespace prefix = st1 ns = \"urn:schemas-microsoft-com:office:smarttags\" \/><st1:city st=\"on\">Chicago<\/st1:City>\u2019s predilection for molecular gastronomy somehow makes a place such as Everest stand out in a way it may not in <st1:city st=\"on\">San Francisco<\/st1:City> or <st1:state st=\"on\"><st1:place st=\"on\">New York<\/st1:place><\/st1:State>.<span style=\"mso-spacerun: yes\">  <\/span>Other factors that makes Everest stand out \u2013 its glorious location on the 40<sup>th<\/sup> floor of the Chicago Stock Exchange, four star reviews by the Tribune and Sun Times, designations by Relais &amp; Chateaux\/Relais Gourmand, Traditions &amp; Qualite, and Le Grande Table du Monde \u2013 and just days ago, a Michelin Star.<\/span><\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\"><\/span> <\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\"><a href=\"http:\/\/1.bp.blogspot.com\/_xdnxgKcsXfw\/TOhYxzj3fTI\/AAAAAAAAHIo\/zsK-mXEOXe8\/s1600\/021+-+Everest+(<img decoding=\"async\" src=\"https:\/\/endoedibles.com\/wp-content\/themes\/grey-opaque\/plugins\/lazy-load\/images\/1x1.trans.gif\" data-lazy-src=\"https:\/\/endoedibles.com\/wp-content\/themes\/grey-opaque\/images\/smilies\/icon_cool.gif\" alt=\"Smilie: 8)\" title=\"Smilie: 8)\" \/><noscript><img decoding=\"async\" src=\"https:\/\/endoedibles.com\/wp-content\/themes\/grey-opaque\/images\/smilies\/icon_cool.gif\" alt=\"Smilie: 8)\" title=\"Smilie: 8)\" \/><\/noscript>.JPG\"><img decoding=\"async\" id=\"BLOGGER_PHOTO_ID_5541776954156875058\" style=\"WIDTH: 240px; CURSOR: hand; HEIGHT: 320px\" alt=\"\" src=\"http:\/\/1.bp.blogspot.com\/_xdnxgKcsXfw\/TOhYxzj3fTI\/AAAAAAAAHIo\/zsK-mXEOXe8\/s320\/021%2B-%2BEverest%2B%25288%2529.JPG\" border=\"0\" \/><\/noscript><\/a><\/span><\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\">\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\">Helmed by Chef Jean Joho, a native of <st1:state st=\"on\"><st1:place st=\"on\">Alsace<\/st1:place><\/st1:State> and a James Beard and Bon Appetit Chef of the Year award winner, and part of the LettuceEntertainYou (TRU, L2o, etc) empire Everest had been on my list for some time but always seemed to get overlooked for someplace less traditional and more innovative.<span style=\"mso-spacerun: yes\">  <\/span>Having originally planned this meal with my friend Dave who dined with me the night prior at Schwa due to Saturday family obligations, I opted to keep my reservation this time and dine alone \u2013 after all, I\u2019d communicated extensively with the lovely special events manager, Megan Laskoski, who had helped to set up a personalized extended tasting menu by Chef Joho for evening \u2013 I\u2019d have been a fool to take a pass.<\/span><\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\"><\/span> <\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\"><a href=\"http:\/\/4.bp.blogspot.com\/_xdnxgKcsXfw\/TOhYynK_hrI\/AAAAAAAAHIw\/HAFHazTKSuw\/s1600\/021+-+Everest+(11).JPG\"><img decoding=\"async\" id=\"BLOGGER_PHOTO_ID_5541776968011187890\" style=\"WIDTH: 320px; CURSOR: hand; HEIGHT: 240px\" alt=\"\" src=\"http:\/\/4.bp.blogspot.com\/_xdnxgKcsXfw\/TOhYynK_hrI\/AAAAAAAAHIw\/HAFHazTKSuw\/s320\/021%2B-%2BEverest%2B%252811%2529.JPG\" border=\"0\" \/><\/noscript><\/a><\/span><\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\">\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\">Arriving minutes early for my 7:00pm reservation after a brisk walk from Millennium Park I made my way into the building, through security, and to the first of two sets of elevators \u2013 I guess the location comes with a price.<span style=\"mso-spacerun: yes\">  <\/span>Checking my bag after the specially designated elevator transported myself and another couple from thirty-nine to forty I headed for the end of the hall and turned left to find one of the most grand dining rooms I\u2019ve seen.<span style=\"mso-spacerun: yes\">  <\/span>Thick white tablecloths, elegant monogrammed carpeting, chandeliers, and a view that went for miles to the right and the hostess stand with none other than Ms. Laskoski at my left \u2013 greeted pleasantly I was led swiftly to a table towards the windows \u2013 surprisingly given the current economic climate the restaurant was packed.<\/span><\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\"><\/span> <\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\"><a href=\"http:\/\/4.bp.blogspot.com\/_xdnxgKcsXfw\/TOhY0q4L0_I\/AAAAAAAAHI4\/hpNGCX0A-Gs\/s1600\/021+-+Everest+(14).JPG\"><img decoding=\"async\" id=\"BLOGGER_PHOTO_ID_5541777003365782514\" style=\"WIDTH: 320px; CURSOR: hand; HEIGHT: 240px\" alt=\"\" src=\"http:\/\/4.bp.blogspot.com\/_xdnxgKcsXfw\/TOhY0q4L0_I\/AAAAAAAAHI4\/hpNGCX0A-Gs\/s320\/021%2B-%2BEverest%2B%252814%2529.JPG\" border=\"0\" \/><\/noscript><\/a><\/span><\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\">\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\">Seated in a comfortable padded chair I was to decide between still\/sparkling\/tap and I was next presented with a wine-list slightly thinner than the phonebook in my home town.<span style=\"mso-spacerun: yes\">  <\/span>With my special menu noted I was left to browse the drinks and upon deciding against alcohol I was asked if I might enjoy a non-alcoholic option such as Martinelli\u2019s Sparkling Cider, an option that actually sounded quite nice.<span style=\"mso-spacerun: yes\">  <\/span>Having never had a $10 cider before I will definitely note it was sweeter and more punchy than the average apple cider the mouth feel was quite similar to champagne.<\/span><\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\"><\/span> <\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\"><a href=\"http:\/\/1.bp.blogspot.com\/_xdnxgKcsXfw\/TOhY04kfEmI\/AAAAAAAAHJA\/gWNBCZDLe8g\/s1600\/021+-+Everest+(17).JPG\"><img decoding=\"async\" id=\"BLOGGER_PHOTO_ID_5541777007041253986\" style=\"WIDTH: 240px; CURSOR: hand; HEIGHT: 320px\" alt=\"\" src=\"http:\/\/1.bp.blogspot.com\/_xdnxgKcsXfw\/TOhY04kfEmI\/AAAAAAAAHJA\/gWNBCZDLe8g\/s320\/021%2B-%2BEverest%2B%252817%2529.JPG\" border=\"0\" \/><\/noscript><\/a><\/span><\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\">\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\">With a female captain and two younger males managing my table service was excellent throughout the evening \u2013 everything was presented with full description, the team was aware of preparation techniques, and my water glass remained persistently full.<span style=\"mso-spacerun: yes\">  <\/span>Presented with a signed copy of my night\u2019s menu I did have to inform the team that I\u2019d specifically requested the Foie Gras be included in the meal (it was not on the menu, but was added without question) and I was a little disappointed that the Duck Margaret would not be part of the evening, but otherwise everything sounded wonderful \u2013 even the timing was exacting with each dish arriving approximately 10-15 minutes following my completion of the prior course.<\/span><\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\"><\/span> <\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\"><a href=\"http:\/\/2.bp.blogspot.com\/_xdnxgKcsXfw\/TOhZudzGroI\/AAAAAAAAHJQ\/CVT8SqqjpDI\/s1600\/021+-+Everest+(1<img decoding=\"async\" src=\"https:\/\/endoedibles.com\/wp-content\/themes\/grey-opaque\/plugins\/lazy-load\/images\/1x1.trans.gif\" data-lazy-src=\"https:\/\/endoedibles.com\/wp-content\/themes\/grey-opaque\/images\/smilies\/icon_cool.gif\" alt=\"Smilie: 8)\" title=\"Smilie: 8)\" \/><noscript><img decoding=\"async\" src=\"https:\/\/endoedibles.com\/wp-content\/themes\/grey-opaque\/images\/smilies\/icon_cool.gif\" alt=\"Smilie: 8)\" title=\"Smilie: 8)\" \/><\/noscript>.JPG\"><img decoding=\"async\" id=\"BLOGGER_PHOTO_ID_5541777996287225474\" style=\"WIDTH: 320px; CURSOR: hand; HEIGHT: 240px\" alt=\"\" src=\"http:\/\/2.bp.blogspot.com\/_xdnxgKcsXfw\/TOhZudzGroI\/AAAAAAAAHJQ\/CVT8SqqjpDI\/s320\/021%2B-%2BEverest%2B%252818%2529.JPG\" border=\"0\" \/><\/noscript><\/a>  <\/span><\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><?xml:namespace prefix = o ns = \"urn:schemas-microsoft-com:office:office\" \/><o:p><span style=\"font-family:Calibri;\"> <\/span><\/o:p><\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\">Beginning the night\u2019s dining would be a trio of les amuses bouche \u2013 left to right the choices included Wild Mushroom Cr\u00e8me Brulee, Maine Lobster in Alsace Gewurztraminer Butter, and Sweet corn Panna Cotta with bacon.<span style=\"mso-spacerun: yes\">  <\/span>While it is tough to trump lobster in butter, the highlight of the amuses would actually be the brulee with its darker earthy tones nicely melding with the sweetness of the crystallized sugar.<span style=\"mso-spacerun: yes\">  <\/span>The panna cotta, while good, was perhaps a little too heavily buttered for my taste and the corn did not shine through the salty bacon as I\u2019d have hoped.<\/span><\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\"><\/span> <\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\"><a href=\"http:\/\/3.bp.blogspot.com\/_xdnxgKcsXfw\/TOhZuHlcmSI\/AAAAAAAAHJI\/EqyESJphaLA\/s1600\/021+-+Everest+(23).JPG\"><img decoding=\"async\" id=\"BLOGGER_PHOTO_ID_5541777990324361506\" style=\"WIDTH: 320px; CURSOR: hand; HEIGHT: 240px\" alt=\"\" src=\"http:\/\/3.bp.blogspot.com\/_xdnxgKcsXfw\/TOhZuHlcmSI\/AAAAAAAAHJI\/EqyESJphaLA\/s320\/021%2B-%2BEverest%2B%252823%2529.JPG\" border=\"0\" \/><\/noscript><\/a><\/span><\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\">\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\">For bread service I was next presented with a slice of Midwestern unsalted butter from <st1:state st=\"on\"><st1:place st=\"on\">Ohio<\/st1:place><\/st1:State> \u2013 smooth and sweet on its own, Everest is rare in that each table has a small salt and pepper shaker and the butter was even more impressive with a touch of salt.<span style=\"mso-spacerun: yes\">  <\/span>Amongst the evening\u2019s breads were <st1:city st=\"on\"><st1:place st=\"on\">Rye<\/st1:place><\/st1:City>, 9-Grain, Baguette, Sourdough, Potato, and Milk.<span style=\"mso-spacerun: yes\">  <\/span>House baked but unfortunately served less than warm I tried each and found the crumb of the baguette and milk bread quite wonderful while the standout flavor wise was certainly the nine grain with obvious notes of sesame and wheat.<\/span><\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\"><\/span> <\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\"><a href=\"http:\/\/4.bp.blogspot.com\/_xdnxgKcsXfw\/TOhZu1OOsEI\/AAAAAAAAHJY\/UyzWyPgG9Ak\/s1600\/021+-+Everest+(24).JPG\"><img decoding=\"async\" id=\"BLOGGER_PHOTO_ID_5541778002575011906\" style=\"WIDTH: 320px; CURSOR: hand; HEIGHT: 240px\" alt=\"\" src=\"http:\/\/4.bp.blogspot.com\/_xdnxgKcsXfw\/TOhZu1OOsEI\/AAAAAAAAHJY\/UyzWyPgG9Ak\/s320\/021%2B-%2BEverest%2B%252824%2529.JPG\" border=\"0\" \/><\/noscript><\/a><\/span><\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\">\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\">Beginning the meal proper, approximately 25 minutes after I sat down, would be my specially requested Press\u00e9 of Cold New York State Foie Gras, Rosehips, Heirloom Apples, Marinated Melon with toasted brioche.<span style=\"mso-spacerun: yes\">  <\/span>Thin and perfect the strip of liver clearly highlighted the dish \u2013 not quite mousse like that at The French Laundry, but more so than that at Henri.<span style=\"mso-spacerun: yes\">  <\/span>Topped with a compote of apple and cinnamon and complimented with a twirl of honeydew and cubes of watermelon I actually found the most intriguing part of this plate a flower spiked balsamic spread on the plate \u2013 savory but with floral notes evident and especially nicely complimenting the apples.<\/span><\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\"><\/span> <\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\"><a href=\"http:\/\/4.bp.blogspot.com\/_xdnxgKcsXfw\/TOhZvnQ_t1I\/AAAAAAAAHJg\/YYWDVVoL-n8\/s1600\/021+-+Everest+(26).JPG\"><img decoding=\"async\" id=\"BLOGGER_PHOTO_ID_5541778016008386386\" style=\"WIDTH: 320px; Farm Fresh Shirred Egg, Champagne Cream, Smoked Sturgeon Caviar.<span style=\"mso-spacerun: yes\">  <\/span>Featuring half an ounce of glistening black eggs both topping the egg and filling the molten yolk interior, the layer in between was a piped sponge of bracing contrast, something like whipped cream made of dry champagne.<span style=\"mso-spacerun: yes\">  <\/span>Perhaps the most memorable savory of a meal full of top notch preparations.<a href=\"http:\/\/4.bp.blogspot.com\/_xdnxgKcsXfw\/TOhbMKmxlkI\/AAAAAAAAHJw\/y_NcH_VVrcA\/s1600\/021+-+Everest+(32).JPG\"><img decoding=\"async\" id=\"BLOGGER_PHOTO_ID_5541779606042940994\" style=\"WIDTH: 320px; CURSOR: hand; HEIGHT: 240px\" alt=\"\" src=\"http:\/\/1.bp.blogspot.com\/_xdnxgKcsXfw\/TOhbkxPD-GI\/AAAAAAAAHKw\/l_it2tzPvxg\/s320\/021%2B-%2BEverest%2B%252876%2529.JPG\" border=\"0\" \/><\/noscript><\/a><\/span><\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\">\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\">As good as the first was in its tradition, the second succeeded in its novelty.<span style=\"mso-spacerun: yes\">  <\/span>Presented and topped tableside with a \u201cfree form\u201d souffl\u00e9 standing tall and proud at the center, the New Wave Fromage Blanc Souffl\u00e9 with Persimmon Coulis, Squash Confit, and Alsace Spice Cake Glace was sublime.<span style=\"mso-spacerun: yes\">  <\/span>Light yet harboring the essence of cheesecake with a base of \u201cspice cake crumble\u201d the souffl\u00e9 itself was a marvel.<span style=\"mso-spacerun: yes\">  <\/span>With chunks of confit squash alongside and room temperature coulis adding fructose sweetness the main portion of the dish alone was worth the hefty price tag ($22 if ordered a la carte.)<span style=\"mso-spacerun: yes\">  <\/span>Equally impressive as the souffl\u00e9 and served <span style=\"mso-spacerun: yes\"> <\/span>over the spice cake crumble at the bowl\u2019s edge would be one of the five best ice creams to ever grace my palate \u2013 nutmeg, cinnamon, clove, allspice \u2013 and smooth as silk.<\/span><\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\"><\/span> <\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\"><a href=\"http:\/\/3.bp.blogspot.com\/_xdnxgKcsXfw\/TOhb8dUbxhI\/AAAAAAAAHLA\/yMUedwoJ_7g\/s1600\/021+-+Everest+(79).JPG\"><img decoding=\"async\" id=\"BLOGGER_PHOTO_ID_5541780435700008466\" style=\"WIDTH: 320px; CURSOR: hand; HEIGHT: 240px\" alt=\"\" src=\"http:\/\/3.bp.blogspot.com\/_xdnxgKcsXfw\/TOhb8dUbxhI\/AAAAAAAAHLA\/yMUedwoJ_7g\/s320\/021%2B-%2BEverest%2B%252879%2529.JPG\" border=\"0\" \/><\/noscript><\/a><\/span><\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\">\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\">Sipping my coffee \u2013 appropriately Intelligentsia given our location in <st1:city st=\"on\"><st1:place st=\"on\">Chicago<\/st1:place><\/st1:City> \u2013 I was next presented with a tray of mignardises.<span style=\"mso-spacerun: yes\">  <\/span>Rather full from the day of eating I opted to taste only one of each (the waiter quickly said \u201cas many as you\u2019d like\u201d when I asked if he could just leave the tray.)<span style=\"mso-spacerun: yes\">  <\/span>Featuring a Marshmallow Chocolate Cone, Anise cookie, Pistachio Financier, <st1:street st=\"on\"><st1:address st=\"on\">Rum Square<\/st1:address><\/st1:Street>, and Lemon Pate a fruit I loved the Marshmallow cone\u2019s presentation, texture, and flavor while the cookie and financier were rather dry.<\/span><\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\"><\/span> <\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\"><a href=\"http:\/\/3.bp.blogspot.com\/_xdnxgKcsXfw\/TOhb98-ddPI\/AAAAAAAAHLI\/5204v7V-pJk\/s1600\/021+-+Everest+(85).JPG\"><img decoding=\"async\" id=\"BLOGGER_PHOTO_ID_5541780461377647858\" style=\"WIDTH: 320px; $200 for the meal, $10 for the cider, plus tax and tip \u2013 I bid my team farewell and made my way to the exit where Megan greeted me.<span style=\"mso-spacerun: yes\">  <\/span>Stemming from a mere comment to my server (when I noted the Foie Gras) about my menu being dated \u201cOctober 6<sup>th<\/sup>\u201d as opposed to November Megan apologized and stated she would take my name and have a menu sent out immediately.<span style=\"mso-spacerun: yes\">  <\/span>Insisting it was not a big deal she persisted and I left my name and address \u2013 four days later I received a new copy of the menu, with the Foie Gras and correct date \u2013 plus a signed card from the team and some promotional information.<\/span><\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\"><\/span> <\/p>\n<p class=\"NoSpacing\" style=\"MARGIN: 0in 0in 0pt\"><span style=\"font-family:Calibri;\"><a href=\"http:\/\/1.bp.blogspot.com\/_xdnxgKcsXfw\/TOhblc0tECI\/AAAAAAAAHK4\/rGd__9a-VK4\/s1600\/021+-+Everest+(77).JPG\"><img decoding=\"async\" id=\"BLOGGER_PHOTO_ID_5541780040429932578\" style=\"WIDTH: 320px;
