Largely identifiable as the man who reinvented Vegas fine dining back in 1998 with Picasso at Bellagio, Serrano\u2019s new eponymous restaurant seemed to be the first foray into Tapas for Vegas \u2013 odd considering America\u2019s recent fascination with small plates in other major cities.<\/span><\/p>\n<p style=\"MARGIN: 0in 0in 0pt\" class=\"MsoNoSpacing\"><span style=\"font-family:Calibri;\"><\/span> <\/p>\n<p style=\"MARGIN: 0in 0in 0pt\" class=\"MsoNoSpacing\"><span style=\"font-family:Calibri;\"><a href=\"http:\/\/4.bp.blogspot.com\/_xdnxgKcsXfw\/TRzZX3hGJXI\/AAAAAAAAHVE\/4FeUhLctoO8\/s1600\/016%2B-%2BJulian%2BSerrano%2B%25286%2529.JPG\"><img decoding=\"async\" style=\"WIDTH: 320px; HEIGHT: 240px; CURSOR: hand\" id=\"BLOGGER_PHOTO_ID_5556555044331332978\" border=\"0\" alt=\"\" src=\"http:\/\/4.bp.blogspot.com\/_xdnxgKcsXfw\/TRzZX3hGJXI\/AAAAAAAAHVE\/4FeUhLctoO8\/s320\/016%2B-%2BJulian%2BSerrano%2B%25286%2529.JPG\" \/><\/noscript><\/a><\/span><\/p>\n<p style=\"MARGIN: 0in 0in 0pt\" class=\"MsoNoSpacing\">\n<p style=\"MARGIN: 0in 0in 0pt\" class=\"MsoNoSpacing\"><span style=\"font-family:Calibri;\">Stylish and sleek, the restaurant was clearly Spanish in design with bold colors, hanging bubbles, a Hitchcockian entryway, and a 40+ person bar.<span style=\"mso-spacerun: yes\">  <\/span>A Spanish native with two Beard Awards and a resume stretching from Paris to Zurich to San Francisco, Julian Serrano restaurant would serve a proving ground for Serrano\u2019s (and Chef de Cuisine Jose Picazzo \u2013 a Andres prot\u00e9g\u00e9) take on modern Spanish food \u2013 something not really shown off with Picasso\u2019s contemporary French menu.<a href=\"http:\/\/1.bp.blogspot.com\/_xdnxgKcsXfw\/TRzZYmCEopI\/AAAAAAAAHVM\/0sK2K8oqbiw\/s1600\/016%2B-%2BJulian%2BSerrano%2B%25288%2529.JPG\"><img decoding=\"async\" style=\"WIDTH: 320px; HEIGHT: 240px; CURSOR: hand\" id=\"BLOGGER_PHOTO_ID_5556555056817676946\" border=\"0\" alt=\"\" src=\"http:\/\/1.bp.blogspot.com\/_xdnxgKcsXfw\/TRzZYmCEopI\/AAAAAAAAHVM\/0sK2K8oqbiw\/s320\/016%2B-%2BJulian%2BSerrano%2B%25288%2529.JPG\" \/><\/noscript><\/a><\/span><\/p>\n<p style=\"MARGIN: 0in 0in 0pt\" class=\"MsoNoSpacing\">\n<p style=\"MARGIN: 0in 0in 0pt\" class=\"MsoNoSpacing\"><span style=\"font-family:Calibri;\">Arriving early for our 12:30 reservation we were quickly sat at a four person hightop attached to the bar.<span style=\"mso-spacerun: yes\">  <\/span>Greeted by our server, Adrian S, a man who would be a source of much annoyance during the meal we declined Sangria and requested water \u2013 water that would be filled and remain filled by the ancillary staff quite adequately.<span style=\"mso-spacerun: yes\">  <\/span>What followed was a nearly 20 minute wait to order as Adrian simply seemed to disappear despite the fact that the restaurant\u2019s ~150 seats were only 1\/3 full.<span style=\"mso-spacerun: yes\">  <\/span>On his return Adrian took orders adequately, but seemed largely disinterested.<\/span><\/p>\n<p style=\"MARGIN: 0in 0in 0pt\" class=\"MsoNoSpacing\"><span style=\"font-family:Calibri;\"><\/span> <\/p>\n<p style=\"MARGIN: 0in 0in 0pt\" class=\"MsoNoSpacing\"><span style=\"font-family:Calibri;\"><span style=\"mso-spacerun: yes\"> <a href=\"http:\/\/2.bp.blogspot.com\/_xdnxgKcsXfw\/TRzZZueBQjI\/AAAAAAAAHVc\/os_ES_foWnw\/s1600\/016%2B-%2BJulian%2BSerrano%2B%252810%2529.JPG\"><img decoding=\"async\" style=\"WIDTH: 320px; HEIGHT: 240px; CURSOR: hand\" id=\"BLOGGER_PHOTO_ID_5556555076262249010\" border=\"0\" alt=\"\" src=\"http:\/\/2.bp.blogspot.com\/_xdnxgKcsXfw\/TRzZZueBQjI\/AAAAAAAAHVc\/os_ES_foWnw\/s320\/016%2B-%2BJulian%2BSerrano%2B%252810%2529.JPG\" \/><\/noscript><\/a><\/span><\/span><\/p>\n<p style=\"MARGIN: 0in 0in 0pt\" class=\"MsoNoSpacing\"><span style=\"font-family:Calibri;\"><span style=\"mso-spacerun: yes\"><\/span><\/span> <\/p>\n<p style=\"MARGIN: 0in 0in 0pt\" class=\"MsoNoSpacing\"><span style=\"font-family:Calibri;\"><span style=\"mso-spacerun: yes\"><\/span><\/span><span style=\"font-family:Calibri;\">Sitting and chatting as the ladies had just landed 60 minutes prior to arriving at the restaurant there was a surprisingly long wait before the start of the meal \u2013 at least 20 minutes which seemed odd for a tapas place.<span style=\"mso-spacerun: yes\">  <\/span>When the food did begin to arrive, however, we figured out why there was a delay \u2013 instead of batching our dozen dishes into waves, they were about to be served all at once.<span style=\"mso-spacerun: yes\">  <\/span>With plate after plate after plate arriving and filling the table I asked Adrian why this was happening and suggested slowing things down to which he responded \u201cthis is a tapas restaurant, sir, it is how things are served.\u201d<span style=\"mso-spacerun: yes\">  <\/span>Having already assured himself a lousy tip by this point I explained to him that although I\u2019ve never been to Spain I have been to a multitude of Andres and Garces spots, plus other \u201ctapas\u201d style restaurants and have never seen anything like this.<span style=\"mso-spacerun: yes\">  <\/span>Without apology I watched him amble off to the kitchen where he actually stopped two servers carrying plates (they would have been numbers 8 and 9 on the table at once) and after this service did improve, mildly.<\/span><\/p>\n<p style=\"MARGIN: 0in 0in 0pt\" class=\"MsoNoSpacing\"><span style=\"font-family:Calibri;\"><\/span> <\/p>\n<p style=\"MARGIN: 0in 0in 0pt\" class=\"MsoNoSpacing\"><span style=\"font-family:Calibri;\"><a href=\"http:\/\/4.bp.blogspot.com\/_xdnxgKcsXfw\/TRzZZMA1PSI\/AAAAAAAAHVU\/pkVXZQADEGs\/s1600\/016%2B-%2BJulian%2BSerrano%2B%25289%2529.JPG\"><img decoding=\"async\" style=\"WIDTH: 320px; toasted bread  fresh garlic tomato sauce  one-year-old manchego cheese, it was perhaps one of the best dishes of the afternoon \u2013 the tomato sauce tangy and fresh, the cheese pungent and strong, the bread hot and crisp.<\/span><\/p>\n<p style=\"MARGIN: 0in 0in 0pt\" class=\"MsoNoSpacing\"><span style=\"font-family:Calibri;\"><\/span> <\/p>\n<p style=\"MARGIN: 0in 0in 0pt\" class=\"MsoNoSpacing\"><span style=\"font-family:Calibri;\"><a href=\"http:\/\/4.bp.blogspot.com\/_xdnxgKcsXfw\/TRzazXbsPqI\/AAAAAAAAHWc\/Fsv5iY1A9-o\/s1600\/016%2B-%2BJulian%2BSerrano%2B%252818%2529.JPG\"><img decoding=\"async\" style=\"WIDTH: 320px; HEIGHT: 240px; CURSOR: hand\" id=\"BLOGGER_PHOTO_ID_5556556616266694306\" border=\"0\" alt=\"\" src=\"http:\/\/4.bp.blogspot.com\/_xdnxgKcsXfw\/TRzazXbsPqI\/AAAAAAAAHWc\/Fsv5iY1A9-o\/s320\/016%2B-%2BJulian%2BSerrano%2B%252818%2529.JPG\" \/><\/noscript><\/a><\/span><\/p>\n<p style=\"MARGIN: 0in 0in 0pt\" class=\"MsoNoSpacing\">\n<p style=\"MARGIN: 0in 0in 0pt\" class=\"MsoNoSpacing\"><span style=\"font-family:Calibri;\">Dish two, Traditional spanish chicken croquetas  chicken  b\u00e9chamel would be another solid dish, much like the versions at The Bazaar and Jaleo the chicken was soft and supple, the b\u00e9chamel creamy and mild.<span style=\"mso-spacerun: yes\">  <\/span>Classic and simple the kitchen executed this dish well, but arriving with all the other plates I did not get a chance to sample until they were already luke-warm, which was a bummer.<\/span><\/p>\n<p style=\"MARGIN: 0in 0in 0pt\" class=\"MsoNoSpacing\"><span style=\"font-family:Calibri;\"><\/span> <\/p>\n<p style=\"MARGIN: 0in 0in 0pt\" class=\"MsoNoSpacing\"><span style=\"font-family:Calibri;\"><a href=\"http:\/\/4.bp.blogspot.com\/_xdnxgKcsXfw\/TRza0UpIBPI\/AAAAAAAAHWs\/VqQUXBUMzWg\/s1600\/016%2B-%2BJulian%2BSerrano%2B%252820%2529.JPG\"><img decoding=\"async\" style=\"WIDTH: 320px; HEIGHT: 240px; CURSOR: hand\" id=\"BLOGGER_PHOTO_ID_5556556632697603314\" border=\"0\" alt=\"\" src=\"http:\/\/4.bp.blogspot.com\/_xdnxgKcsXfw\/TRza0UpIBPI\/AAAAAAAAHWs\/VqQUXBUMzWg\/s320\/016%2B-%2BJulian%2BSerrano%2B%252820%2529.JPG\" \/><\/noscript><\/a><\/span><\/p>\n<p style=\"MARGIN: 0in 0in 0pt\" class=\"MsoNoSpacing\">\n<p style=\"MARGIN: 0in 0in 0pt\" class=\"MsoNoSpacing\"><span style=\"font-family:Calibri;\">A third classic, Stuffed dates  almond  applewood bacon wrap  spicy piquillo pepper would prove to be one of my favorite dishes of the meal.<span style=\"mso-spacerun: yes\">  <\/span>Sweet and smoky the dates themselves were top notch.<span style=\"mso-spacerun: yes\">  <\/span>Stuffed with an almond that I can only assume had been precooked in pork fat and wrapped in a thick slice of savory bacon before flash frying the flavors all worked as expected.<span style=\"mso-spacerun: yes\">  <\/span>Served with a side of intensely hot pepper sauce most of us stuck to the dates solo while my sister enjoyed the heat.<\/span><\/p>\n<p style=\"MARGIN: 0in 0in 0pt\" class=\"MsoNoSpacing\"><span style=\"font-family:Calibri;\"><\/span> <\/p>\n<p style=\"MARGIN: 0in 0in 0pt\" class=\"MsoNoSpacing\"><span style=\"font-family:Calibri;\"><a href=\"http:\/\/4.bp.blogspot.com\/_xdnxgKcsXfw\/TRzbpYoMlNI\/AAAAAAAAHW0\/YxNxsaOKXQQ\/s1600\/016%2B-%2BJulian%2BSerrano%2B%252821%2529.JPG\"><img decoding=\"async\" style=\"WIDTH: 320px; HEIGHT: 240px; CURSOR: hand\" id=\"BLOGGER_PHOTO_ID_5556557544300516562\" border=\"0\" alt=\"\" src=\"http:\/\/4.bp.blogspot.com\/_xdnxgKcsXfw\/TRzbpYoMlNI\/AAAAAAAAHW0\/YxNxsaOKXQQ\/s320\/016%2B-%2BJulian%2BSerrano%2B%252821%2529.JPG\" \/><\/noscript><\/a><\/span><\/p>\n<p style=\"MARGIN: 0in 0in 0pt\" class=\"MsoNoSpacing\">\n<p style=\"MARGIN: 0in 0in 0pt\" class=\"MsoNoSpacing\"><span style=\"font-family:Calibri;\">Having already noted her fancy for spice, Stuffed piquillo peppers  goat cheese  mushrooms would be another choice of my sister\u2019s.<span style=\"mso-spacerun: yes\">  <\/span>While she enjoyed the dish, I personally found the peppers to be quite muted and the cheese overwhelming.<span style=\"mso-spacerun: yes\">  <\/span>Had I not done a double take, I\u2019d have never guessed mushrooms were included in the filling, either.<span style=\"mso-spacerun: yes\">  <\/span>I will note, like the croquetas, this dish was already becoming chilly by the time I had a chance to taste.<\/span><\/p>\n<p style=\"MARGIN: 0in 0in 0pt\" class=\"MsoNoSpacing\"><span style=\"font-family:Calibri;\"><\/span> <\/p>\n<p style=\"MARGIN: 0in 0in 0pt\" class=\"MsoNoSpacing\"><span style=\"font-family:Calibri;\"><a href=\"http:\/\/3.bp.blogspot.com\/_xdnxgKcsXfw\/TRzaznuCceI\/AAAAAAAAHWk\/raIbbzBdbxE\/s1600\/016%2B-%2BJulian%2BSerrano%2B%252819%2529.JPG\"><img decoding=\"async\" style=\"WIDTH: 320px; tuna-raspberry skewer  ahi tuna  \u201cmolecular\u201d raspberry  wasabi  sesame seed.<span style=\"mso-spacerun: yes\">  <\/span>At $14 the portion\/price ratio was poor, but the flavors and quality more than made up for it.<span style=\"mso-spacerun: yes\">  <\/span>With the \u201cmolecular\u201d aspect a similar texture to a gelee, the sweetness of the raspberry was nicely tempered by the heat of the wasabi while the pan seared tuna coated in sesame seeds lent heft and crunch to the dish.<span style=\"mso-spacerun: yes\">  <\/span>At the same time visually appealing, texturally intriguing, and tasty this was the sort of dish I had expected when walking into Julian Serrano, though I\u2019d have personally preferred sashimi style from the fish.<\/span><\/p>\n<p style=\"MARGIN: 0in 0in 0pt\" class=\"MsoNoSpacing\"><span style=\"font-family:Calibri;\"><\/span> <\/p>\n<p style=\"MARGIN: 0in 0in 0pt\" class=\"MsoNoSpacing\"><span style=\"font-family:Calibri;\"><a href=\"http:\/\/1.bp.blogspot.com\/_xdnxgKcsXfw\/TRzaGYEp7tI\/AAAAAAAAHV0\/YgAfxhwDvrU\/s1600\/016%2B-%2BJulian%2BSerrano%2B%252812%2529.JPG\"><img decoding=\"async\" style=\"WIDTH: 320px; Agreeable the second wave would feature all five dishes arriving at once\u2026a much more manageable number for 4 people and limited table space.<span style=\"mso-spacerun: yes\">  <\/span>The first dish, Octopus  cachelo potatoes  spanish paprika would be a straightforward preparation similar to what I experienced at Amada earlier this year, but superior is size, preparation, and taste.<span style=\"mso-spacerun: yes\">  <\/span>Flawless in texture I\u2019d not be surprised if the Octopus had received Sous Vide treatment prior to a pan finish, but aside from the excessive olive oil (undoubtedly at least 1\/4 cup returned to the kitchen) everything of the dish was textbook\u2026and really, the wasted oil is on the kitchen\u2026had they given me bread I\u2019d have soaked it all up as it was very high quality.<\/span><\/p>\n<p style=\"MARGIN: 0in 0in 0pt\" class=\"MsoNoSpacing\"><span style=\"font-family:Calibri;\"><\/span> <\/p>\n<p style=\"MARGIN: 0in 0in 0pt\" class=\"MsoNoSpacing\"><span style=\"font-family:Calibri;\"><a href=\"http:\/\/4.bp.blogspot.com\/_xdnxgKcsXfw\/TRzaG9oGi9I\/AAAAAAAAHWE\/lixLke7lC5s\/s1600\/016%2B-%2BJulian%2BSerrano%2B%252815%2529.JPG\"><img decoding=\"async\" style=\"WIDTH: 320px; HEIGHT: 240px; CURSOR: hand\" id=\"BLOGGER_PHOTO_ID_5556555824218097314\" border=\"0\" alt=\"\" src=\"http:\/\/1.bp.blogspot.com\/_xdnxgKcsXfw\/TRzaFQ0lxqI\/AAAAAAAAHVk\/uQ16YuPC9qU\/s320\/016%2B-%2BJulian%2BSerrano%2B%25281%2529.JPG\" \/><\/noscript><\/a><\/span><\/p>\n<p style=\"MARGIN: 0in 0in 0pt\" class=\"MsoNoSpacing\">\n<p style=\"MARGIN: 0in 0in 0pt\" class=\"MsoNoSpacing\"><span style=\"font-family:Calibri;\">The final dessert, and the best in my opinion, was BunuelosSpanish doughnutsbutterscotch caramel.<span style=\"mso-spacerun: yes\">  <\/span>Slightly larger and more airy than the doughnut holes the night before at Sage the texture of the doughnuts was spot on.<span style=\"mso-spacerun: yes\">  <\/span>Paired with a hefty butterscotch caramel that harkened to a similar dip at Michael Mina\u2019s Bourbon Steak in Detroit this simple dessert was once again evidence that the Serrano kitchen works best when it doesn\u2019t try to reinvent the wheel.<\/span><\/p>\n<p style=\"MARGIN: 0in 0in 0pt\" class=\"MsoNoSpacing\"><span style=\"font-family:Calibri;\"><\/span> <\/p>\n<p style=\"MARGIN: 0in 0in 0pt\" class=\"MsoNoSpacing\"><span style=\"font-family:Calibri;\"><a href=\"http:\/\/1.bp.blogspot.com\/_xdnxgKcsXfw\/TRzcGByyecI\/AAAAAAAAHXU\/k2BMZ-E8gU4\/s1600\/016%2B-%2BJulian%2BSerrano%2B%252828%2529.JPG\"><img decoding=\"async\" style=\"WIDTH: 320px;
