Born in Burbank, and brought to Las Vegas Boulevard by the folks behind Morels French Steakhouse & Bistro, it was August of 2019 that the Strip finally started brewing once again, and although Trustworthy Brewing Company’s location in Palazzo’s Grand Canal Shoppes will always be challenging the Food from Chef Lloyd Bansil is both accessible and delicious while service exudes friendly professionalism.
Now a part of the Strip’s dining scene for six months, and finally beginning to gain traction during a busy Conference season, Trustworthy Brewing Co. occupies a sizable footprint capable of seating more than four hundred guests, and capable of producing some 1150 gallons of Beer from tanks inside a specially-designed room it should go without saying that Lager-heads as well as IPA drinkers are certain to find something they will enjoy.
Sparring no expense in the build-out, a large bar surrounded by tables, booths, event space and a PDR, it was after greetings from a bubbly hostess that five guests were seated, televisions showing sports while music played low-volume overhead.
Built with “Fun” as a core-value, several styles of Beer with quirky names poured throughout a space featuring Skee Ball, it was alongside Cocktails and $15 flights that Appetizers arrived, a new Salad featuring Arugula, tart Apples, Candied Walnuts and Blue Cheese touching all parts of the palate while generously-filled Wontons and Soy-Glazed Ribs each saw smoked Pork complimented by something sweet.
Continuing with Deviled Eggs that kindly limit Mustard and instead focus on Herbs plus crispy peppered Bacon, Chef Bansil’s Prime Beef Short Rib adheres to the same high standards as both the bone-in Pork versions, Flesh tender and Fat beautifully rendered alongside a trio of housemade Sauces that can easily be skipped thanks to the quality Beef and Garlic-Herb Rub.
Happy to see Brussels Sprouts less lemony than prior, snappy Broccolini with a bit of heat also available for those seeking a healthy side dish, fans of Cornbread will be happy to know Trustworthy’s is still one of Las Vegas’ best versions while Fish & Chips built around Beer Battered Haddock would be benefitted by placing the Fries alongside so that they don’t get soggy.
Built to be an eye-catcher, bright blues and reds coating walls throughout the continuous main room, two new items are delivered on Buns, the “Black & Blue Burger” cooked-to-temperature beneath Pepper-Crusted Bacon, Blue Cheese and Sauteed Mushrooms while Trustworthy’s spin on Spicy Chicken derives most of its flavor from the juicy marinated Bird and piquant Garlic.
More than happy to devour two types of Pork Rinds with the Sandwiches, a slight edge given to the Salt & Vinegar Chicharrónes, Dessert has seen a sharable skillet Brownie recently added, and although good it is no competition for Banana Pudding with a brûléed Marshmallow top as one of the Venetian-Palazzo’s best ways to end a meal.
FOUR STARS: While it is true that Trustworthy Brewing Company isn’t Las Vegas Boulevard’s first Brewery, it is the only current one, and although more televisions to watch sports would be nice there is already a lot to love about the space, most notably the attentive service and some reference standard items, not to mention Craft Beer flights that offer great value on the dollar.
RECOMMENDED: Cornbread, Pork Rinds, Soy-Glazed Pork Ribs, Beef Short Rib, Banana Pudding.
AVOID: The Skillet Brownie feels like an obligatory “Chocolate Dessert” and placing Fries beneath the Fish leaves these “Chips” anything but crispy.
TIP: Open daily from 11am until 11pm on the second floor of Palazzo, inside the Grand Canal Shoppes. Happy Hour Drink deals from 3pm to 6pm and 9pm to close, with half-off select Appetizers 3pm to 6pm.
