Although Kolaches originated in Czechoslovakia the Sweet Bread has become almost as Texas as BBQ, nearly every Donut Shop or Bakery in the Lonestar State offering their own iteration while places such as Greg Saltsman and Wade Chappell’s Pearl Snap have built their entire Restaurant around the Pastry.

Named after the buttons on Western shirts, but not nearly so fancy inside or out, it is from a chalkboard menu that selections are offered, a dozen varieties of Kolache both sweet or savory offered alongside simple Breakfasts, Burgers and “Sammies.”

A passion project by the two friends, now entering year nine, Kolaches are baked throughout the day and invariably fresh, $2.75 each yielding yeasty Rolls centered by housemade Preserves, lightly sweetened Cream Cheese or even the flavors and texture of Pecan Pie.
