The brainchild of former Graphic Designer Javier Marca, Panic ushered in a new era of baking when it opened in 2012, Madrid’s prior lack of artisan Loaves soon flourishing and still anchored today by six basic styles sold at Calle de Conde Duque 13.

Mixing modern thinking and classic technique, essentially a workshop across from Conde Duque cultural center, it is prior to Panic’s 09h30 opening that a small queue starts to develop including locals, tourists, old and young alike.

Focused more on Bread than Pastry, but well-priced across Wheat, Rye, Spelt and organic Grains amidst Sourdough, travelers are fortunate to find half-Loaves available surrounded by hearty Crust, the Crumb’s texture precise with just the right amount of stretch whether in Marca’s Centeno or unparalleled Cinnamon Roll that frequently sells out before it has time to cool.
