When Pecan Lodge packed its bags for Main Street Dallas’ BBQ scene underwent seismic change, lines in Deep Ellum present forever since and opening the door for Austin-import Terry Black’s debut in late-2019.
Situated inside a former comedy club, spacious with abundant smokers plus seating both indoors and out, it is upon entry that guests are instructed to choose Sides first – standards such as Mac n’ Cheese joined by snappy Green Beans brightened by spices plus Corn so creamy it might just as well be called Soup.
Featuring an educated staff, pitmasters willing to talk shop and servers quick but pleasant, Terry Black’s offers Meats by the pound, half or quarter, “Brisket is King” signage met by ample smokiness and Fat nicely rendered so that all but the Bark could be easily devoured by someone lacking teeth.
Still the pride of Lockhart, Terry’s sons in charge of the Dallas outpost, Sausage offers some resistance before giving way to beautifully-textured insides while Turkey is less moist than that of The Slow Bone but generously peppered across its surface.
Not about to miss out on Cornbread, housemade and buttery with the sort of crumbliness that makes a mess without getting dry, Dessert is best enjoyed to a Rock n’ Roll soundtrack where Led Zeppelin or The Who accompany peerless Banana Pudding or Dylan’s “The Times They Are a-Changin’” appropriately matches gently smoked Pecan Pie.
