Opting to perform some upgrades even before pandemic restrictions shuttered on-site dining statewide, Chefs Jeffrey Weiss and Paras Shah are back at Valencian Gold currently baking Bagels, but on Thursday to #supportlocal a more traditional route was taken.
This time tapping Chef Shah’s heritage, and piggybacking off the duo’s collaboration with Marc Marrone for @deliveringwithdignity, it was a throwback to 7960 S Rainbow Blvd Suite 8000A’s days as Kulinarya Express Filipino Kitchen that four home-style dishes were served, plus a tray of the Valencian Gold’s Citrus-kissed Snickerdoodles.
An underrepresented cuisine considering the vast number of immigrants from the Philippines throughout Las Vegas, but one accessible to a variety of palates thanks to Spanish and Asian influences, it was on a bed of Garlic Rice that bowls were built, tangy Green Beans a surprising hit with many while slowly cooked Chicken Adobo featured Dark Meat that easily slipped from the Bone into a complex blend of Herbs and cooking Juices.
Also serving a huge tray of Pancit, or “Filpino Chow Mein” according to one native on staff, suffice it to say Noodles slicked with something salty is always a safe bet with this group and none went to waste between lunch and boxes taken home full of leftovers.
N/A: Making it blog policy to not ‘rate’ places based on catering or takeout alone, Chefs Shah and Weiss created something unique and delicious with Valencian Gold, and continue to push forward during tough times while also doing their part to support the community.
