Now nearly thirty months old, and currently the only Restaurant confirmed to remain after Hard Rock Hotel & Casino rebrands as Virgin Hotel in 2020, MB|Steak continues to reveal itself as something of a hidden gem even though the menu has only changed slightly since opening.
Secluded from the gaming area, Oyster Bar to one side and Magic Mike Live on the other, MB|Steak is described as being created by the Morton Brothers to “bring the best memories of [their] family’s history to life,” though through the addition of swank lighting and luxury Ingredients prepared by Chef Patrick Anthony Munster this certainly is not the typical chain with locations stretching from California to New York and Mexico to Japan.
Heavily wooded around a spiked Chandelier, and following traditional structure in offering Appetizers, Steaks, Entrees and Sides, it is beginning with Cocktails that most will choose to start their evening, the Spicy Cucumber concoction suggested by a server pleasing the woman celebrating her birthday while a Pineapple Daiquiri went down fast, as did the first of two Loaves of Cheese-crusted Bread from Hard Rock Executive Pastry Chef Mickey Harden.
Shown a pair of well-priced Steak specials, though on the whole MB|Steak’s Prime Beef costs approximately 20% less than similar cuts on Las Vegas Boulevard, it was instead on items intended to be shared than an order was focused, the Crispy Rock Shrimp enjoyable with either of two tangy Sauces while Octopus was smoky and tender on an elongated plate amidst Wine-sweetened Broccolini and Tomatoes.
Choosing the Chopped Salad as a mid-course, Tiger Shrimp with a good sear standing out against a backdrop of Beans, Artichokes and Hearts of Palm brightened by acid and brine, it was per the Lady’s wishes that Chef Munster’s Chil-rubbed Steak carried over from SW Steakhouse was served alongside steamed Crab, the 32oz cooked just past rare offering great taste and texture with up-front heat that dissipates shortly after swallowing.
Repeatedly impressed by MB|Steak’s sides, the Creamed Corn better than in 2017 thanks to better sweating the Poblanos and leaving some Kernels whole, Brussels Sprouts also performed well in an entirely Vegan preparation while Cornmeal and Potatoes each used plenty of Cheese to achieve excellence.
Taking a trip to the upstairs lounge for a view of the city next, and returning just on time for Dessert, it is again thanks to Chef Harden that all five choices are amongst the best of their kind in Sin City, though if forced to prioritize the “New York” Cheesecake is flawlessly textured and complimented by caramelized Bananas plus Popcorn while MB’s multi-layered Carrot Cake remains a mandatory last bite thanks to thin ribbons of Cream Cheese Frosting and plenty of Baking Spices topped in roasted Pineapple.
FOUR AND A HALF STARS: Owned by the Morton family, but certainly not Morton’s Steakhouse, MB|Steak has been confirmed to remain after Hard Rock Hotel & Casino’s rebranding as Virgin, and that is a good thing for fans as service and Chef Munster’s Food has only gotten better from the beginning while Chef Harden’s Desserts have always been impeccable.
RECOMMENDED: Cheese Bread, Chopped Salad, 32oz Roasted Chili Rub Tomahawk, Creamed Corn, Grits, Potato Gratin, Layered Carrot Cake, New York Cheese Cake.
