Hypothetically, let’s pretend one is single, male, without children and not looking for a gym that costs more than some family’s monthly rent – why exactly is this individual at Tivoli Village? Until June of 2019 the answer was probably “lost,” “hunting for cougars,” “in need of a lawyer” or simply bad taste. That all changed when James Trees opened Ada’s, and now the Chef’s spin-off of Esther’s Kitchen is open for Brunch.
Recently celebrating six-months, and resembling Chef Trees’ mega-successful Arts District spot more by the day, it is from complimentary parking that guests are invited to enter the pleasantly decorated space surrounding an open kitchen, Chef de Cuisine Dylan Jobsz found working side-by-side with James on this particular day during which nearly every seat was full by noon.
A good place to gather a group of like-minded diners, the menu spanning everything from Eggs to Sandwiches, Pizzas and Pasta, it was along a wood-lined wall of bottles that seven guests were seated, the outdoor patio even doing well in early December while General Manager Sonia Stelea kept an eye on her well-trained front of house.
Equally well-priced as Esther’s Kitchen, no item more than $16 including several that can easily be shared, it was beginning with locally roasted Coffee from Vesta and fresh squeezed Orange Juice that Brunch got started, Dylan’s Sourdough forming the base of Toast and housemade Jam with Almond Butter brightened by Lemon Zest.
Creating a sense of openness with bright colors and high ceilings, the soundtrack including a lot of mid-tempo rock playing unobtrusively above, it was with the linger of Citrus still on the lips that Ada’s Dutch Baby was presented, a price $1 less than that of Rooster Boy Café yielding better texture and nearly twice as much Food while the Duck Benedict with delectable Duck Fat Hollandaise rivals Bardot’s Hunter’s Waffle for $16 compared to $25.
Never skipping Esther’s Polenta, the same creamy goodness offered during Brunch at Ada’s with Eggs, Mushrooms and a crispy Cheese lattice, guests should make sure not to overlook “Eggs + Sauce” just because it sounds simple, since as a result of high quality Ingredients the flavors and diverse textures are nothing short of fantastic.
Taking a calculated risk with the Croque Madame, imported Italian Ham and Tomato Bechamel eating somewhere between the classic French Sandwich and an afterschool special of Grilled Cheese dipped in Soup, there is no risk entailed in ordering any of Ada’s Pastas, the Cacio e Pepe reference standard while there is no better Pesto to be found in Las Vegas than that which slicks the Gemelli.
Offering far fewer Pizzas than when it opened, and less esoteric options as well, it is fortunate that the Calabrian with ‘Nduja remains while those seeking a vegan-friendly choice should strongly consider the vibrant green Falafel Wrap…or briefly give up their thought that appropriately milking a Cow is somehow bad for it and indulge in a custard-soaked slice of Sourdough cooked golden and topped with Salted Caramel Best Ice Cream.
FIVE STARS: Although much has changed since Ada’s opened its doors at Tivoli Village, the Restaurant in a much-maligned space finally seems to have found its audience, and by taking an Ingredient-focused approach to Brunch James, Dylan and team have created what very-well may be Summerlin’s first true daytime weekend destination.
RECOMMENDED: Toast + Jam, Dutch Baby, Gemmelli Pasta, Duck Benedict, Polenta, Eggs + Sauce, Croque Madame, Calabrian Pizza, French Toast.

TIP: Brunch begins at 10am on weekends and runs till 3pm. Parking is usually available on the street outside, but if not the most convenient access to Suite 120 offered by underground parking and the second escalator/elevator from the Rampart entrance.
