Let’s face it, when a Restaurant occupies real estate across from The Bellagio Fountains they really don’t need to try *that* hard, yet from the moment HEXX Kitchen + Bar debuted inside Paris Las Vegas a new standard for 24/7 dining was born.
Rapidly approaching five years since replacing Sugar Factory, and two years post-separating into HEXX Kitchen + Bar with Alexxa’s Bar next door, it was in the main dining room that guests were seated at 11:00am, the fourth Christmas in five celebrated with AGM Ari Stotland leading a talented and friendly service team.
Less busy than the average weekend, but still more than 3/4 full even when including outdoor seats in 45ᵒF weather, it was while upbeat Christmas favorites played overhead that menus were perused, three courses preceded by Coffee, and starting with HEXX’s generous Fruit Plate.
Most recently spending time revamping the Alexxa menu, a bit of “if it’s not broke don’t fix it” applied to HEXX, particularly at Brunch, additional starters included homemade Granola and Yogurt with macerated Berries plus the “Cinnaroll Waffle” that has seemingly only gotten better in terms of softness beneath the Cinnamon-Sugar and Frosting.
Trekking savory next, a bit of heat included in everything but crispy Spuds with Salt and Parmesan, it was by request that Matt Piekarski’s Crispy Broccolini made an appearance from the Dinner menu, nearly every bite consumed by one diner while others focused on Squid given the Buffalo Wing treatment and smoky Chilaquiles.
Happy to use Chicken & Waffles as a transitional pate, pieces of Waffle, fried Bird and Pickle dunked in Syrup touching every part of the palate, more sweets arrived after a moment’s respite, Red Velvet Cake celebrating one guest’s birthday with a candle but the best bites neck-and-neck between HEXX’s world-class Carrot Cake Pancakes and Pastry Chef Miranda Prince’s Blueberry Corn Cobbler that is hot, cold, crispy, gooey, sweet and salty all at once.
FIVE STARS: At this point a proper ‘tradition’ with no plans to divert course for many years to follow it is places like HEXX Kitchen + Bar that truly make Las Vegas stand out as a holiday travel destination, their service every bit as welcoming as any other day of the week and the menu full of crowd-pleasing favorites for almost any age, race and city/county of origin.
RECOMMENDED: Fruit Plate, Carrot Cake Pancakes, Chicken & Waffles, Crispy Broccolini, Chilaquiles, Blueberry Corn Cobbler.
