Made aware just twenty-four hours before departing Stockholm of Sophie’s Canelé it was for part three of Breakfast that the small shop was visited, a listed opening time off 08h30 apparently meaningless as the Café’s eponymous item was nowhere to be found at 09h20 when the young clerk quoted ‘about an hour’ till they were done…an hour that in reality meant about 140 minutes due to reported “oven problems.”

Located at Sankt Eriksgatan 81 and thus in close proximity to other eateries on the day’s agenda, a one stop ride on the Metro bringing two guests back both before and after lunch to check on Sophie’s progress, it was during the first of these two stops that four items who apparently survived oven issues were tasted, the Almond Croissant an unmitigated disaster dripping with Frangipane while a Kouign Amann oddly baked in paper fared only slightly better thanks to poor separation of its buttery layers.

Heartened by Praline Brioche that those from Lyon would be proud of plus a Cardamom Bun that used a Muffin pan to its advantage in creating good rise beneath plenty of spice it was finally around 13h00 that two Canelé with a third gifted “for your patience,” a nice gesture but not enough to justify so much effort to taste a Pastry that was merely average, the shell not nearly hard enough and easily dented by the fingers though the Custard inside was fairly close to textbook in terms of taste and texture.
