Three months removed from Rosallie, though catering has twice impressed colleagues since, it was based on a discussion a week prior that Jonathan Pluvinet decided to try something a little different on Wednesday, his recipe for Peanut Butter Croissants translated from Florida to Las Vegas and even better than imagined as layers of lamination cradled freshly ground Nuts without suffering a bit of sog while the flavor of Jelly was replicated by dehydrated Raspberries stuck to the surface by Dark Chocolate.
Every bit as charming as in the past with General Manager Christophe found working alongside one additional Baker at 7:00am it was in addition to the daily special that an all new Tart was offered featuring tender baked Pears atop the same housemade Almond Paste that fills Rosallie’s world-class Viennoiserie, the toastiness of this particular specimen even better than usual while Cinnamon Rolls previously topped on Cream Cheese Frosting were not quite the same with drizzled Icing, though the wispy texture still outpaces any in Las Vegas.
FIVE STARS: From the moment Rosallie opened its doors a new era was born for French Pastry in Las Vegas and although many have opened since none have managed to catch up, let alone surpass what Jonathan continues to make look easy.
