Started as a counter-service concept inside T-Mobile Arena, Graffiti Bao has been making itself known to Southwest Las Vegas since September 2019, the opportunity to cater Marc Marrone’s Food in February going over so well with staff that delivery from 7355 South Buffalo Drive has been requested six times since.
Previously discussing Chef Marrone’s background here, time with Tao Group unequivocally involved in Asian Cuisine capable of satisfying both discerning diners and folks that typically gravitate to Panda Express, it was at 11:20am that Graffiti Bao employees arrived with everything necessary, PPE in-place and safety never in question.
Opting for staff-favorites, in addition to new items from a list that offers far more diversity than its brevity suggests, Crab Rice was predictably the first stop for many, and although the funky Fish Sauce and restrained heat were once again highly praised Graffiti Bao’s Sweet Sesame Beef went just as quickly with the entire tray gone by the end of lunch.
Opting for Orange Duck this time, instead of Chicken, the quality of Graffiti Bao’s sourcing shows well from Protein to Produce, three styles of the Restaurant’s eponymous Buns satisfying diners on this day with the BBQ Pork a favorite for many but the Kung Pao Chicken and Pulp Fiction referencing Royale with Cheese also pretty tough not to love.
Neglecting White Rice to save stomach capacity for more interesting things, at least three whole Scallion Pancakes devoured including one order alongside Burrata and Garlic Chili Sauce, Crispy Chili Garlic Noodles won out over Lo Mein or Basil Chow Fun this time while a first time order of Marrone’s Braised Short Ribs with folded Bao actually incited an adoring e-mail from the sponsoring speaker.
Shifting off-menu, Marc’s Spicy Chili Eggplant living up to its name and praise thanks to Peppers, Onions, lightly sweet sauce plus plenty of Thai Basil, another new dish titled “Spicy Sticky Fried Rice” will hopefully find a spot on Graffiti Bao’s menu soon as Duck, Curry, Peanuts and Chilis marry beautifully with a great diversity of textures.
Finishing with Dessert Bao, but not before a scoop of Graffiti Bao’s Fried Rice with crispy Chicken Skins, it was with several staff members packing leftovers that the afternoon passed quickly while already looking forward to the next time Marc and his team come to lunch.
N/A: Making it blog policy to not ‘rate’ places based on catering alone, Graffiti Bao sets a very high standard in terms of customer service, while every Item across five orders has been nicely presented, displaying “Fusion” without being compromised and appealing to a broad range of diners.
