Previously discussing Chef Marrone’s background here, time with Tao Group unequivocally involved in Asian Cuisine capable of satisfying both discerning diners and folks that typically gravitate to Panda Express, it was on-time Wednesday that a Graffiti Bao employee arrived with everything necessary, professionalism and safety never in question.

Opting for old favorites from a menu that offers far more diversity than its brevity suggests, the Graffiti Burger was predictably the first stop for many, and although the tender Meat and fresh Toppings were highly praised Graffiti Bao’s Chicken Fried Rice remains a fan-favorite thanks to toasted Chiles and bits of fried Skin on top.

Onward to Green Beans slicked with Honey, the quality of Graffiti Bao’s sourcing shows well from Protein to Produce, five styles of the Restaurant’s eponymous Buns satisfying diners on this day with the BBQ Pork a favorite for many but the Pulp Fiction referencing Royale with Cheese also pretty tough not to enjoy.

Neglecting White Rice to save stomach capacity for better things, at least three whole Scallion Pancakes devoured over the course of an hour, Marrone’s Braised Short Ribs with folded Bao saw two trays emptied nearly as quickly.

Rounding out the allotment with Crispy Wings and Spring Rolls, the latter often overlooked but amongst the best of their kind thanks to an oilless exterior housing plenty of meat and flavor, it was with plenty of Leftovers packed that staff was sated and already looking forward to the next time Graffiti Bao is ordered.

Historically the first Restaurant ever tapped to #supportlocal with lunch at the office, and reprising their catering role several times since, it was on Friday that Naked City Pizza delivered from the Blue Diamond Road “Express” location approximately ten minutes away.

The 20th time bringing Christopher and Michael Palmeri’s Pizza Shop off-site, indoor dining now reopened brand-wide, it was minutes prior to 11:30am that Michael arrived with a glut of items, easily enough Food for twice the number of guests with plenty of leftovers for later.

Presenting everything temperature appropriate with PPE to assure customer safety, it was not long before first-shift lunchers called dibs on Slices, Cup n’ Char Pepperoni predictably proving popular atop melted Mozzarella and housemade Sauce with plenty of Herbs, as did Diners, Drive-Ins and Dives famous Guinea Pie featuring White Garlic Sauce and Grandma Palmeri’s Meatballs.

Slinging Sin City’s best Chicken Wings, a few dozen plus “Fingers” devoured in minutes, Salad again proved popular with those seeking something lighter while a first taste of Naked City’s “Taco Pizza” also fared well thanks to melty Cheese and Taco Sauce atop the Meat, Tomatoes and Onions.

Continuing with Garlic Buns, fluffy as ever, slices continued to be enjoyed alongside a mixed Sausage and Meatball Skillet while Dessert consisted of rich Chocolate Cake that eats heavier than Mousse but not as dense as Cheesecake.

Now serving Sin City for 18 months it was Sunday around noon that a quick trip was made to Wicked Donuts, now a well-oiled machine and home to Fritters worth driving out of the way for.

Already discussing Pastry Chef Robert Teddy’s background here, 5:30am daily openings doing nothing to diminish his joyous spirit, it was from the seasonal menu that three styles were tasted, each featuring real Vanilla Bean, fresh Fruit and expert frying-times.

Home to 27 daily flavors any discussion of Wicked Donuts should begin with the base, buttery Brioche peaking through between ample amounts of Fruit with Glazes designed to amplify Blueberry and Pineapple while Apple-Pear takes a more complex route to success via the bold aromatics of Cardamom.

FIVE STARS: Set back by a global pandemic and protracted “soft opening,” an experienced palate will immediately notice Wicked Donuts quality dwarves anyone locally from Toppings-to-Base, while prices continue to trend lower than the bigger “names.”

RECOMMENDED: Blueberry Fritter, Pineapple Fritter.

Opened by a trio of industry veterans in March 2021 The Original Doughnut Bar replaced Chopstix Express at 2625 South Decatur Boulevard with two dozen varieties of fried Dough on sale beginning at 6:00am daily.

Painted pink and grey with a drive-thru and billed as “the first Liquor- infused and Liquor -glazed Doughnut concept in the Las Vegas,” it is while approaching the window that the collection is described along the building’s length, though for those arriving after 10:00a several styles may already be gone.

Small batch with fair prices, oversized glazed rings for $1.50 and boozy options commanding $4, it was around 11:00am that a friendly ODB server recited the remaining choices, a “one of each” request delivering several novelties.

Using scratch-made Glazes and Fillings, Dark Chocolate Ganache but one example that outperforms Carl’s or PinkBox, The Original Doughnut Bar’s base is buoyant without being airy and just yeasty enough to prevent items such as the Sugar-coated Twist from being nothing but sweet.

Pairing Pastries to Peet’s Coffee, a rarity in Sin City, Bismarcks constitute most of ODB’s designer choices, the Tiramisu heavy with Coffee and all the better for it while Coconut Cream tastes more natural than it did July of last year.

Further raising eyebrows with Cronuts, though they are not listed on the online or drive-thru menu, two varieties sport nicely separated layers and an ample amount of Glaze also found lightly penetrating the top of a crisp but oily Apple Fritter.

Faring better with a Peach Fritter, either frying time or the Fruit itself creating a more delicate texture, the morning’s only remaining Liquor-Infused Doughnut was described as “Bailey’s Strawberry Shortcake” and although the Booze wasn’t necessarily evident the Dough and delicate Filling combined to form a flavor exactly as its name suggests.

FOUR STARS: About to celebrate one year serving Las Vegas The Original Doughnut Bar fills a niche via both selection and location, the prices still better than most but early sell-outs and a poorly updated website making it a crapshoot as to what will be available on arrival.

RECOMMENDED: Peach Cobbler Fritter, Tiramisu Doughnut, Bailey’s Strawberry Shortcake Doughnut.

AVOID: Arriving late, expectations of an updated menu.

TIP: Attempts to pre-order are foiled by a dead e-mail link on the website and slow Social Media response times yet again.

Replacing a Blaze Pizza on Rainbow Boulevard in October 2021 it is safe to say Clove Indian Cuisine and Bar filled a niche, the rapidly expanding area until then featuring an abundance of dining options but the nearest Indian eatery no less than ten minutes by car.

Close to Arby Avenue, the 215, several businesses and medical offices, owner Ankit Bansal found the space nearly turn-key save for replacing artwork and installing a Bar plus Tandoor oven, the result a brightly lit space that is spotless from entryway to the bathrooms.

Closed Mondays, but otherwise offering a Lunch Buffet from 11am until 3pm and A la Carte Dinner from 5pm to 10pm, it was as a party of eight that two dozen Items were ordered, complimentary Papadum kicking things off next to housemade Chutney that also goes well with spicy Samosas or golden, crisp Pakora.

Offering Indian Booze and Beer, though a Mango Lassi goes further in quelching the heat, Vegetarians will discover no shortage of options including Pepper-soaked Paneer or deep-fried Cauliflower that is delightfully complex with a faintly sweet finish.

Using the Tandoor to make Las Vegas’ best Naan, airy but crisp around the perimeter whether brushed with Butter or topped in Garlic or Peppers, that same oven also turns out succulent Meats best sampled as a “Tandoori Mixed Grill,” but equally impressive when used to build Biryani that doesn’t hold back in terms of spice level.

No doubt built with an Indian clientele in mind, a half-full dining room at 6:00pm suggesting success so far, Stews come in sharable portions whether one sticks to familiar Butter Chicken and spicier Tikka Masala, or ventures into Bone-in Goat Curry and Saag Paneer teaming with Cream and Chili Peppers.

Most impressed by Lamb Rogan Josh, the creamy Sauce vibrant with Cardamom and Ginger, Paratha comes as a surprise with good stretch and light flavor perfect for sopping up Sauces or cleansing the palate when dipped in cooling Raita.

Well priced up until Dessert, though authentic through-and-through, “$5 for two pieces” Gulab Jamun suggests one could pay for their whole Lunch Buffet by eating six small orbs while Kheer is undersweetened and fairly bland in comparison to creamy Kulfi and Gajar Halwa that makes up for a lack of Sugar with plenty of Fruit and Cardamom.

FOUR STARS: An excellent addition to the South Rainbow corridor Clove Indian Cuisine and Bar is cooking Indian Food for an Indian palate, though with a number of familiar dishes even a novice can find something to love at a fair price in contemporary confines featuring good service.

RECOMMENDED: Vegetable Pakora, Gobi Manchurian, Tandoori Mixed Grill, Chicken Tikka Masala, Butter Naan, Lamb Rogan Josh, Goat Curry, Paratha, Gajar Halwa.

AVOID: Chicken Makhani is less rich than many, Saag Paneer is almost inedibly spicy, Kheer is mostly flavorless.

TIP: LUNCH Buffet is currently $15 and selections change daily.

Open from 11:00am until 9:00pm daily at Suite 110 of 6115 South Fort Apache Road, and Sin City’s best place for Barbecue ever since the Henderson original debuted in January 2016, it was just prior to 11:30am that the smell of Big B’s Texas BBQ began to drift down the hallway, staff quick to arrive for what was once again an overabundance of smoked Meat, Dessert and Sides.

Named after its Pit Master and changing the long-held belief that Las Vegas is not a Barbeque town ever since the original opened in Henderson, Big B’s Texas BBQ features the work of Brian Buechner and Natalia Badzjo, the husband and wife team taking a hands-on approach to every aspect of the operation from build-out to driving in fresh piles of wood as needed from the Lone Star State.

Available for dine-in, take-out, catering and delivery, all presented by staff clad in PPE, it was really no surprise when Macaroni and Cheese as well as Hot Links were quickly depleted, with slices of gooey Pecan Pie or freshly made Banana Pudding soon to follow.

Texas through and through, the aforementioned wood just one reason why Big B’s Brisket and Turkey outpace growing competition, the choice of lean versus moist generally sees the former go first at this office, though thanks to a deeply penetrating ring of smoke both live up to high standards.

Not about to forget Sin City’s best BBQ Beans, or a large Salad requested by some, suffice it to say Rolls were underutilized with several leftover, not because they aren’t good but more so as a result of the abundance of Cornbread that seems to get better and better with time.

Adding on Creamed Corn, plus thick-cut Fried Onions, a second helping of everything proved mandatory, though even for someone with a decidedly large appetite it might be smart to stop a bit short of stuffed next time to avoid wanting an afternoon nap instead of four more hours of work.

Debuted in early 2021 Milpa took over the former Elia space at 4226 South Durango Drive, its off-kilter location unfortunately easy to miss despite the fact that Chef DJ Flores is cooking some of the best contemporary Mexican Cuisine in Las Vegas.

Part Molino and also a sit-down Café, with stone-ground housemade Tortillas a point of pride, Milpa’s focus is a healthier sort of Mexican Fare built largely from local Ingredients, and although not everyone will appreciate that difference the ones that do will be rewarded by every bite.

Ordered for delivery on Monday, a Milpa employee arriving on time with plenty of serviceware and utensils, it was not long before staff piled their plates with everything from fragrant Rice to spicy Spuds, while Corn Esquites channel Elotes minus all the Mayonnaise.

Raised in Vegas with skills developed under thinkfoodgroup and Too Hot Tamales before staging at Quintonil in Mexico City, Chef Flores created Milpa after time at Chica in The Venetian, though the authenticity of this project far outpaces anything from Lorena Garcia whether it be Salad or roasted Meats.

A merging of talents featuring Chef Beau MacMillan and members of Clive Collective, the Food Network “star” producing recipes for a 15,000-square-foot space overlooking Hotel Pools, it was immediately prior to 12:00pm kickoff that four guys were offered seats inside a semicircular booth with full view of several enormous televisions.

Doubling as a Club at night, moving lights and a “magical forest” amidst happy-face tagging creating a vibe, it was with tunes blasting that the room filled slowly, a pasty white DJ inexplicably incapable of cutting the music after commercials and repeatedly interrupting commentary.

Fluid from interior to patio with virtual golf and cornhole along the way, service comes from busty severs in keyhole tops, Drinks predicably poured quick at premium pricing while mostly male bussers do an admirable job of keeping up with water, serviceware and cleanup.

Settled in for nearly six hours on this particular Sunday, Angelinos drunk off $475 Mimosa towers having a ball nearby, dining began with Brunch specials including Elvis French Toast that outpaces its price thanks to a perfect Custard Soak around Bacon and Peanut Butter while $22 for a Sticky Bun only seems expensive until one sees five featuring the undeniable talents of Virgin Pastry Chef Mickey Harden.

Turning out better-than-expected Pizzas, first a Breakfast Pie with lots of Bacon and Eggs on a nicely-leavened Crust, Fried Chicken n’ Waffles is a touch undersized for $19 but otherwise exemplary from the Liege-style base to gently spiced Honey Hot Sauce.

Unimpressed by acrid Coffee, clearly brought from another venue considering timeliness and temperature, game two saw a “Frozen Party Favor” pair well to fiery Truffalo Wings and Nachos that hold up well to an abundance of Toppings including succulent Pork plus pureed Avocados.

Warned of soggy Poutine, though a simple bowl of Fries fared well, MacMillan’s team again finds success in the “Black Truffle Hustle Pizza” thanks to Caramelized Onions juxtaposing earth and tangy Feta while buttery laminated Pretzels deserve better than the tepid Queso Blanco already coagulating on delivery.

THREE AND A HALF STARS: No doubt designed to party Money, Baby! hits the mark for scene and service, but in terms of dining or watching a game the experience would be better off with a DJ that can read the crowd, more tables above toddler level and adjustments in the kitchen to assure Food arrives at an appropriate temperature.

RECOMMENDED: Elvis French Toast, Giant Sticky Bun, Hot Wings with Truffalo Sauce, Black Truffle Hustle Pizza.

AVOID: Coffee, Pretzel Bites, Desserts “sold out” despite no one ordering and knee-high tables the hostess will attempt to force on anyone who doesn’t refuse.

It was during an early-2021 dinner at EDO Gastro Tapas & Wine that Francesco Di Caudo was seen eating at a nearby table, his presence again in September prompting General Manager Roberto Liendo to confidentially confirm plans of opening a new space at the Gramercy with Chef Di Caudo at the helm.

Officially opened on January 8th, the old Kitchen Table Squared space now more vibrant, Anima by EDO hopes to merge Italian and Spanish Cuisine into a whole new experience, several of Chef Oscar Amador’s signatures making their way over from Chinatown to join Di Caudo, who was last employed at Ferraro’s Italian Restaurant & Wine Bar.

Tapping industry veterans from front-of-house to back, Chris Leavitt heading up the bar, it is following warm greetings at the door that guests are led to a choice of diverse seating options, banquets in the back most quiet with a full view of murals from local artist Apolo Torres.

More “approachable” than EDO per Liendo, though certainly never lacking for creativity, Dinner at Anima deserves Bubbles to begin – extra dry Prosecco pairing well to plump Oysters bathed in acid that proceed Scallop Crudo and a rosette of cured Tuna brightened by Peruvian Peppers.

Serving Charcuterie from the former Barista station near the door, a mix of Spanish and Italian choices perfect for two-to-four alongside tableside Gin & Tonic or fruity Sangria, Anima’s “Catalan Olive Oil Bread” riffs on Pa Amb Tomàquet with a texture not unlike layered Biscuits that is delightful as is, but even better slathered in Homemade Goat Cheese.

Focused largely on new items, more than a handful of the others previously served “in development” by Oscar at EDO, Hand Chopped Beef Tartare becomes more interesting than most thanks to Anchovy Dressing while Cacio e Pepe Croquetas and Burrata with Butternut Squash textures aim to please Vegetarians in the crowd.

Utilizing Chef Di Caudo’s skills for Pasta, Agnolotti Carbonara likely to offend purists but nonetheless delicious, the menu’s current standout comes as Leek & Napa Cabbage Raviolini that reminisces of Eastern Europe in its assertiveness beneath a blanket of Foie Gras Cream.

Less creative with Maltagliati, think deconstructed Lasagna with more earthiness, traditional Catalan Suquet finds modernist flare in an orb of Saffron All í Oli while grass-fed Piedmontese Beef eats clean yet richly flavored alongside Tomatoes, Garlic and sized down Patatas Bravas nuggets.

All wrapped around an open kitchen, with a Private Dining Room perfect for groups, Dessert is a mix of old and new, Strawberry Ice sparkling next to buttery Mousse and Flan brightened by Citrus preceding airy Pistachio Semifreddo and “choose your own adventure” Chocolate Cremeux guaranteed to shock the palate more than once.

FOUR AND A HALF STARS: From the team that brought Las Vegas EDO Gastro Tapas & Wine, Anima by EDO is bigger and brighter with all the right ingredients to succeed where others have struggled, though doing so will require careful consideration of how to balance creativity and accessibility in an attempt to please old fans while simultaneously wooing the Gramercy’s usual clientele.

RECOMMENDED: Malfy Gin & Tonic, Catalan Olive Oil Bread, Homemade Goat Buttermilk Ricotta, Burrata, Leek & Napa Cabbage Raviolini, Catalan Suquet, Piedmont Flat Iron, Flan, Strawberry Granita.

More and more social-media savvy over the years this visit entailed more than the usual “OG Classics,” and although PinkBox’s Old Fashioned Cogwheels are still Las Vegas’ best additional traditional choices are mostly as expected, but now more pricey than other spots making equal or better such as Real Donuts, The Original Doughnut Bar or Friendly Donut House.

Fully committed to clever nomenclature, Roberto Armanino’s famous Caramel Cheesecake now “The Caramelo,” “Love My PB&J” succeeds thanks to Housemade Raspberry Jam and plenty of creamy Peanut Butter while “John Lemon” uses Graham Cracker Streusel for texture atop a Bismarck stuffed with Housemade Lemon Filling.

Continuing with former “Doughnut of the Month” Purple Rain, its flavor no different from Sweet Potatoes though texture is magnified by crumbles placed on top, “Smashin’ Apple” eats a whole lot like Apple Pie while “Holy Cannoli” riffs on the Italian specialty with everything present but the crunch.

FOUR AND A HALF STARS: A fan of the staff and fried Dough at Pinkbox for nearly nine years there remains no place better for Ol’ Fashioned and artisan choices, but as prices have inched upwards the value for more basic forms of Bars or Raised Donuts has diminished even as creativity has flourished.

Having enjoyed Chef Peter and David Mozes’ Bronze Café at The Center, The Market and Juice Stars, it was to #supportlocal that lunch was catered from their North Buffalo location on Wednesday, a collection of old favorites predictably arriving on time with plenty of plates and utensils that allowed staff to enjoy every second of their lunch hour.

Located near Desert Shores in Summerlin, the former home of Beau Monde Bakery providing turnkey access for a Restaurant now offering Breakfast, Lunch and Dinner, it was from Chef Mozes’ home recipes that Lunch consisted of several bowls and trays, a classic Wedge Salad making fast fans of those who opt to eat light while Brussels Sprouts shined thanks to their accoutrements.

Continuing Organic, Vegan and Gluten-free with Dill Potatoes, it was via “Sammiches” that appetites were further sated, California Turkey expectedly gone first but quickly followed by The LGBTQ and Green Goddess Chicken which each eat cleaner than the traditional version thanks to better Ingredients served in proper ratios.

Happy to receive a glut of Desserts, all Vegan and The Peanut Butter Snickerdoodle still Las Vegas’ best Cookie despite mounting competition, those missing Beau Monde’s gluten-free offerings will be happy to know the Banana Flax Cake is made without any Wheat protein, as too is a fully loaded Carrot Cake that has only gotten better with time.

Continuing strong with the cleverly titled Loving v Virginia, a Brookie that sees both halves nicely textured, Chai Spice Cookies remain soft and almost Cake-like while an all-new Oatmeal Craisin round updates an old favorite with a “buttery” crumb despite the lack of Butter, Milk or Eggs.

Rounding out the afternoon with Brownies and The Strawberry Cookie, each soft but the former a little dry, others delighted in Fruity Pebbles Treats made with Vegan Marshmallows that also contribute to the delightful new Rocky Road Cookie.

Debuted in 2017 Botolino from Carlo Gattini has been impressing denizens of Dallas ever since, a second location at Preston Royal Village expanding the third generation Gelato maker’s reach in winter 2020.

Classically trained beginning with his Grandmother, later the masters of Italy, Carlo’s Gelato starts with a pure base and traditional methods, the addition of locally and Internationally-sourced Ingredients eschewing anything artificial – including preservatives.

Always fresh with small batches made daily, a clean white layout building an aesthetic similar to those in Milan, Samples should precede ordering, Gattini “White Coffee” beautifully balancing bitter with Sugar while Coconut Stracciatella is an innovative take on the classic that tastes like a more-natural Mounds Bar.

Still the pride of Lockhart, Terry’s sons in charge of the Dallas outpost, Sausage offers some resistance before giving way to beautifully-textured insides while Turkey is less moist than that of The Slow Bone but generously peppered across its surface.

Not about to miss out on Cornbread, housemade and buttery with the sort of crumbliness that makes a mess without getting dry, Dessert is best enjoyed to a Rock n’ Roll soundtrack where Led Zeppelin or The Who accompany peerless Banana Pudding or Dylan’s “The Times They Are a-Changin’” appropriately matches gently smoked Pecan Pie.

Known for Donut Messages and Funnel Donuts served out of a North Dallas Strip Mall since 2012 it was not until late-2018 that Jarams opened its doors in Lakewood, but ever since that time the small shop has been selling-out by noon thanks to quality Ingredients and creativity.

Located at 2117 Abrams Road, limited parking a minor inconvenience at the former Dry Cleaner, it is upon entry that guests are greeted by brightly-lit cases featuring everything from “Average Joe” options to $6.48 specials.

Painted purple and yellow, prices a guess until at the register, it was in exchange for $19.54 that five were taken elsewhere to eat, first bites of Blueberry Cake lighter than many despite plenty of Fruit flavor while the Old Fashioned described as a Chocolate Glazed Buttermilk Donut found an otherwise enjoyable cogwheel compromised by its artificially flavored topping.

Getting creative with $3.99 Crème Brulee, a carefully piped Ring with crackling sugar and subtle bitterness, Funnel Cake Donuts fortunately justify premium pricing thanks to both size and consistency that is lighter than Cake but more dense than yeasted whether rolled in Spiced Sugar or sandwiching Honey-soaked Apples with sliced Almonds on top.

Created by Mary Beth and Paul “Bubba” Vinyard in 1981 Bubba’s Cooks Country has remained a Park Cities’ icon for four decades, glowing neon still greeting guests from 6:30am until 10:00pm daily at 6617 Hillcrest Avenue.

Once a Texaco station, but now home to Mary Beth’s timeless recipes and Art Deco décor, it is amidst pandemic precautions plus a labor shortage that Bubba’s is currently working as take-out only, though Southern hospitality and fair pricing remains unchanged.

Still family owned, a chain of “Babe’s Chicken Dinner House” also carrying on the Vinyard’s legacy, it is at prices minimally higher than Popeye’s that Bubba’s offers scratchmade goodness, the Chicken’s golden coating well spiced with a lot of crunch around tender white or dark meat.

Known for their Yeast Rolls, fluffy even an hour before closing, Cornbread is a little dry without the addition of Butter or Honey while Potatoes are tasty mashed with Gravy or fried crisp and seasoned.

Sold out of Banana Pudding late-Sunday, again “staffing” per the cashier, Cherry Cobbler is no less delicious thanks to juicy Fruit without a lot of extra Sugar mixed with Pie Crust that’s loaded with Butter and nostalgia.

Claiming to “create a sense of diversity and inclusivity in our community” through design-one’s-own Donuts and Shakes one can only hope Urban Donut’s social agenda outpaces both their unbearably dry rings and lousy customer service.

Visited Sunday around noon, the second location on Allen Street selected entirely based on proximity, it was to half-filled shelves and music that guests were “greeted,” the quotes in response to a masked woman who uttered no hello and barely three words in monotone save for the half-dozen’s high price.

No stranger to upscale Donuts, and in reality having visited more shops across America than perhaps a select few, tasting occurred outside Urban Donut’s tight confines, the Old Fashion sending up warning flags with day-old texture plus a dearth of Sour Cream that is even more lacking in a Cinnamon-Sugar rolled “Churro.”

Not partaking in “The Selfie,” an overly clever way to upsell Fillings or Toppings added by dismissive staff, not even Icing and Buttercream are enough to save McKinney Ave from a chalky consistency while Samoa-riffing Highland Park fares better – though not by much.

Finding some hope in Raised Donuts, Pegasus Crunch fluffy beneath Nutella and adherent Rice Krispies around an unnecessary Chocolate Kiss, Urban’s Fritter thankfully features plenty of Fruit and not much Oil, but an overwhelming amount of Glaze unfortunately renders the flavor just sweet.

Created by Chef Jeffery Hobbs in 2013 there has been no shortage of accolades for The Slow Bone since opening, years in fine-dining perhaps inconsequential to Smoked Meats but paying dividends across everything from daily specials to Pickles, Desserts and Sides.

Off the beaten path near Turtle Creek, though this has never stopped diners from lining up prior to an 11:00am opening, it was in cold weather that guests stood awaiting entry while a smoker dubbed “Miss Jessie” finished her preparation of Sunday’s first servings.

All smiles and pleasantries, Chef Hobbs front and center slicing Meats for each guest, it was with wide eyes that four guests ordered far too much, a Pickle and Sauce bar rounding out two trays from which supple Turkey Breast was an immediate standout thanks to unparalleled juiciness.

Decorated as expected, with Beer signs and photos to compliment a Country soundtrack, Prime Brisket trends a little less smoky than one might hope while housemade Sausage are snappy and bright with or without one of Slow Bone’s many Sauces.

Exciting with Sides, far from the average BBQ standards, Collards have all the sapor of Hobbs’ Pulled Pork brightened by Vinegar while Beans are benefitted by Brisket, though Vegetarian-friendly Sweet Potato Praline and “Brussel Flower Au Gratin” are no less delicious.

Not forgetting Slow Bone’s famous Fried Chicken, blasphemy to purists but nonetheless excellent thanks to a Smoked Water Brine and Potato Starch adding to its crispy coating, Carbs come not from plain White Bread but rather an oversized Cookie and sticky Cornmeal sliced, fried into golden orbs or served as gooey Pudding.

Still with no preservatives, corn syrup or artificial colors across the collection, though this newer location lacks the cute décor and friendly demeanor of Bishop Arts, it was in exchange for $16.25 that two small slices were received, Emporium’s “Hot Cake” less custardy than Chess over buttery Crust while “Melted Snowman” tastes a whole lot like Oreo Cookies dunked for too long in a glass of Milk.

To suggest it is difficult opening a Tasting Menu Restaurant will not surprise anyone but doing so during a pandemic takes confidence possessed by few, and with this in mind it is hard to overstate exactly how important Dallas’ Carte Blanche is both locally and as relates to “Fine Dining” as a whole.

Begun as a series of pop-up Dinners before debuting the brick-and-mortar space in June 2021, high ceilings and exposed beams reminiscent of the spaces in New England where Amy and Casey La Rue cooked prior to settling in the Lone Star State, it was 6:00pm that two diners were seated on the verge of a kitchen gleaming with steel and white.

Already visited at Breakfast, Amy’s Pastries setting the bar high for Casey’s $175 12-course menu pre-purchased via Tock, it is with lights focused on custom-made tables that the Lower Greenville space becomes more intimate with service to match.

Refined but far from stuffy, the sort of place where either jacket and tie or jeans with a sweater are equally acceptable, it was after selecting Beverages that dinner began promptly, Canapes touching each part of the palate followed by a proper Amuse of Tuna and Caviar that pairs well to Sparkling Wine or carbonated Silver Tip Tea.

Indeed offering “Tea Pairings” with each course, a bargain for exclusive varieties that match courses equally well as a duo of Wine Pairings, those willing to pay an $85 supplement continue their experience by way of a whole ounce of Sturgeon Caviar atop gently heated Scallops swimming in Butter and Seaweed.

Never meant to be taken lightly, seasonality the focus and many Ingredients locally sourced, chilled Sikkim proves a brilliant match to creamy Liver intended to be slathered on faultless Viennoiserie while bold Ethiopian Koserret stands up well to carefully Grilled Eel with crisp Skin painted in Lemongrass Gastrique.

Moving next to Swordfish, firm flesh accompanied by acid, salt and earth, Taiwanese Oolong signals the arrival of Collard Greens and Grits served in rarefied air alongside Wild Boar Belly and Venison Sausage with smoldering wood beneath.

Still stunned by the “Texas BBQ,” as Chef La Rue called it, winter at Carte Blanche continued by way of velvet Cheddar Fondue perfumed by Truffles before throttling back a bit, tangy Ice and Cucumbers carefully cleansing the palate in preparation for “Entrees” – with as s.

“Everything is Bigger in Texas” indeed, half a Quail stuffed with Duck Sausage reminiscing of Casey’s time at Joel Robuchon in an appropriately rustic way, the night’s final savory eschews Wagyu in favor of locally-raised Elk served rare and lean with a slice of Foie and faultless Bordelaise.

Skipping Carte Blanche’s Cheese Plate, a supplement in addition to portion-sizes that won’t leave anyone hungry, elegant Sake Sabayon atop housemade Sorbet offers easy transition to dueling Desserts, a quenelle of Carmelia Mousse nesting on thick Chocolate and delicate Ricotta Donuts each delicious to the final bite and complimented well by warm Chinese Tea infused with Litchi.

Nothing short of a “destination” Restaurant, and the only one that also houses a world-class Bakery by day, Amy and Casey La Rue have created something opinionated, smart, precise and delicious at Carte Blanche – the sort of Restaurant whose success thus far speaks volumes about the passion of those involved and the sort of diners who travel for experiences like these.
