Set on making the drive from Minneapolis to Winnipeg, one reason a strong belief that even small towns contain dining worth investigating, it was around 1:00pm that parking was found at Nichole’s Fine Pastry in Fargo, Chef Nichole Hensen’s Bakery and Cafe nearly 3/4 full towards the end of lunch hour with everyone from men in suits to retirees enjoying a range of items both sweet and savory.

Serving North Dakota’s largest city for over a decade, the Glenburn native and graduate of CIA at Greystone opening up shop at 13 8th Street South Tuesday through Saturday by eight o’clock, it is immediately upon entry that the smells and sounds of a working Bakery are apparent, at least one half of the space dedicated to production and service though there is still plenty of seating available on the Restaurant’s left side.

Recently receiving some attention from Food Network, a spot on “Best Desserts” joining local accolades dating to 2003, it was only after lengthy debate that six items were selected with some-for-now-some-for-later intent, though in reality almost nothing ordered would make it out the door.

Pleasantly designed and low volume, the din of other diners far lower than similarly filled spaces in major cities including Minneapolis, it was sipping self-serve Water that tasting began with Hensen’s Spice Cake layered in Buttercream, the Sponge moist but not heavy while Frosting is restrained, the follow-up “Seven Layer Bar” expectedly more dense but still better than many thanks to additional Nuts and Coconut which helped temper the sweetness of Butterscotch and Condensed Milk

Intrigued to see fresh Viennoiseries coming out of the kitchen past noon, the clerk overheard saying they’d run out and had to make more, it was here that Nichole’s really proved their skills, the Dough separating in innumerable layers and spilling its tangy stewed Fruits along with Cream Cheese while two Cookies to follow were enjoyable, though the Chocolate Chip was both slightly underbaked and a bit too salty.

Saving what a server had referred to as “the best” for last, $5.25 for an individually sized Tart rivaling the prices seen in Manhattan or Chicago, it was eyeing a slightly uneven Shell with some skepticism that tasting ensued, the flavor at first intense with Cocoa but quickly turning sweet and then mellowing as the two mixed in the mouth to a satin-smooth consistency.

Blackbird Cafe, Minneapolis MN

Blackbird Cafe

Sweet Potato Biscuit

French Toast, Apricot Chutney, Pure Maple Syrup, Whipped Butter

Swedish Pancakes, Cranberry-Blueberry Compote, Honey Ricotta

Opened in 2007 and toqued by Chef Yia Chang Blackbird Cafe appears to be little more than a cozy neighborhood joint from the outside, but like The Kenwood this three-meal eatery offers more than most would think whether in the morning when Oxtail or Sweetbreads occasionally find their way into Benedicts and Hash or at night when handmade Pasta takes center stage.

Located at 3800 Nicollet Avenue in the Southwest, the interior featuring kitschy touches such as the television-turned-aquarium and antlers above the bar, it was just past eight o’clock that the Restaurant was found un-busy, a lone sever taking care of what was eventually six tables spread across the lengthy room.

Made cozy by mixed wood and bright lights, a soft soundtrack muting kitchen sounds and other diners, it was after some debate that an a la carte route was taken in order to taste more items, the ability to order just one Pancake or French Toast at a discount creating quite a feast for under twenty dollars.

Asked if it was okay that all items come out at once, the kitchen presumably also running a skeleton crew early, it was with agreement that three plates arrived in less than fifteen minutes, first bites of a Sweet Potato Biscuit on which Chef Chang typically ladles Country Gravy showing nice layering and light sweetness though the unsalted Butter accompanying it added nothing in terms of texture or flavor.

Turning attention next to a $5 Swedish Pancake, the naming largely inconsequential but probably more accurate than “Crepe” considering the Dough’s thickness and stretch, suffice it to say that flavors here were far more complex than those traditionally served with Lingonberries thanks to reduced Fruit and Ricotta while eggy French Toast was merely decent in terms of the griddled Bread but elevated to better than average by housemade Chutney and real-deal Syrup.

Patisserie 46

Kouign Amann

Almond Croissant

Raspberry Bostock

Canele de Bordeaux

Fresh Fig Tart

Europe-trained and multiply awarded for his work in several international Pastry competitions it was finally in 2010 that Chef John Kraus decided it was time to open a space of his own, and although Southwest Minneapolis now possesses the likes of Revival, Meyvn and Sun Street Breads it was Patisserie 46 that turned the area into a “destination” just as it continues to today.

Located at the corner of West 46th Street and Grand Avenue South, a sunbathed facade just past 7am welcoming guests with the aroma of Yeast and Vanilla before even reaching the door, it is immediately on entering the Patisserie that eyes widen at warm wood and a lengthy display case, other folks arriving clearly regulars as they were greeted by name with warm smiles by a pair of young women.

Said by many to be not only Minnesota’s best Bakery but also a national contender for that title, Kraus’ Brioche in particular an item often mentioned as one worth seeking out, it was after lengthy perusal that five items were selected, two still warm and thus dictating an order of eating which began with Kouign Amann that breaks clean displaying countless layers and a melted Butter center surrounded on all sides by caramelized Sugar.

At times working with whimsy but mostly dedicated to the creation of classics par excellence, an Almond Croissant next showing lamination equal to the Kouign Amann but unfortunately a touch too much moisture at the bottom, it was here that Kraus’ famous Bread took center stage in the form of a crustless round that better saw Almond Paste baked crisp atop a soft base lightly painted with Jelly.

Happy to see Canele de Bordeaux offered, Patisserie 46’s version ending a streak of below average versions found stateside with a crunchy shell and just-set Custard heavily scented by Vanilla, it was rounding out the visit with a seasonal Tart that precision continued to show, the all-Butter Crust razor-sharp and both Cream and Custard lightly floral which worked well with sliced Figs on top.

Having challenged anyone with knowledge of the topic to name a better Bistro or Brasserie in North America than Las Vegas’ Bardot it was finally an acquaintance from Minnesota who volunteered Grand Cafe, Chef Jamie Malone’s reinvented Minneapolis concept that was already on the radar thanks to some national attention plus her appearance earlier this year at Josh Smith’s World-class Brasserie for Mother’s Day Brunch.

Now operated under the toque of Malone and Erik Anderson for going on two years, Jamie’s time in the kitchen beginning December 2016 after earning accolades at several local Restaurants, it was officially in March the year after that the 70 year old space was purchased and retouched, details such as the zinc top Bar left vintage but areas such as the dining room benefitted by new wallpaper and paint.

Focused on a unique style of French Cuisine with classic technique enhanced by whimsy, a Chicken Liver Paris Brest causing quite a stir when named Food & Wine’s 2018 Dish of the Year, it was as a party of three that a quiet table away from the front window was occupied at 7:00pm, the space perhaps ninety percent full though more diners would soon make sure no tables were empty.

Not at all a place to rest on its laurels, menus evolving by season and Chefs’ inspiration such that even Grand Café’s most famous dish has now changed, it was beginning with housemade Bread and good Butter that a three course feast unfolded, the Brest now downsized to a Pate a Choux Donut whose $3-per-bite cost is completely justified while moist Cornbread Madelines also retool something familiar in a manner that still feels correct in the mouth despite flavors that are bold and unexpected.

Progressing more traditionally henceforth, a Blanquette of pan-seared Sweetbreads and Mushrooms showing off Malone’s Sauce skills before roughly ground Pig parts were tasted inside golden Pastry, it was after perhaps twenty minutes that course two was underway, a $28 “Appetizer for the Table” rethinking Pike Quenelles with Langoustine instead of Crawfish and thus enhancing the sauce with a bit more salt while the Soufflé itself was virtually weightless yet still very rich.

At this point seeing others getting full, one less familiar with fine dining “shocked” at how what seemed to be a modest amount of Food could have such an effect, it was almost as if overhearing the comment that Malone’s $35 Omelet arrived alongside Carrots cooked in Butter, the faultless yellow fold centered by what could have easily been 1/4 pound of sweet Crustacean while accompanying Toast assured not one drop of velvety Sauce would go uneaten.

Not about to depart such a meal without Dessert, even the Coffee paying close attention to detail, it was beginning with a polarizing “Cheesecake” that ate more like cold Butter that far better tastes and textures followed, the Sponge Cake soaked liberally with Bourbon finding balance in Vanilla Cream while Grand Café’s Carrot Cake invests heavily in Cardamom that along with minimally sweetened Cream Cheese Frosting makes it more savory than most.

Although many outside of The Twin Cities have probably not heard of Isaac Becker it seems safe to say that his “brand” is unaffected, the Chef who won 2011’s James Beard Foundation Award for Best Chef Midwest now operating three Restaurants including his first at 112 North 3rd Street where guests will still find a line every night unless they have the foresight to make reservations.

Appropriately named 112 Eatery, simple signage and a shotgun straight interior from door to kitchen doing little to advertise a space that feels much older than its 2005 birthday would suggest, it was shortly after the Restaurant’s 5:00pm opening that greetings and a table were offered, the windowside two-top already set with serviceware plus small bowls of Spiced Nuts and Olives.

Best described as “cozy” or perhaps even “intimate,” exposed brick and candles paired to dark wooden tables beneath dimmed lamps, guests sitting down to dinner will soon find themselves browsing a Menu that defies region or style, the idea of a “Gastropub” at times coming to mind thanks to Burgers and Wings but then taking a decidedly European turn with Foie Gras in the style of Paul Bocuse or pan roasted Sweetbreads.

Served by a team that is professional yet cheerful without even the slightest hint of pretense, a collection of plates prone to frequent change described in great detail for any question asked, it was after deciding upon five that a one by one procession ensued, warm housemade Breads with Butter arriving soon and prone to spoil the appetite of those who are not careful thanks to their quality.

Well paced despite limited seating, an opening plate of Caulilini seeing the hybrid Crucifer lightly charred atop creamy Polenta flavored by Miso and Sesame, it was approximately ten minutes later that the first of two Pastas would arrive, a menu staple of Gnocchi earning its praise through freshly shaved Parmesan Cheese and feather light simplicity plus plenty of Butter.

Happy to see half-orders of some items offered without upcharge, a blessing to solo diners as well as those who simply wish to enjoy more variety, it was shortly after mopping up all remaining Sauce that hand-cut Tagliatelle from Executive Chef Jonathan Seltvedt arrived, another veil of Cheese slowly melting over slick ribbons in light Gravy plus pale grey orbs rich with the unmistakable flavor of Duck Liver.

Without doubt a place to save room for something sweet, Pastry Chef Shawn McKenzie keeping pace with Becker and Seltvedt’s international approach, it was glancing over another tribute to Nancy Silverton’s infamous Budino that 112’s Tres Leches was requested alongside a more recently added item, the layer of fresh Bananas beneath Mousse and macerated Blackberries undeniably enjoyable but still not in the same league as the super-saturated Sponge topped liberally with lightly sweetened Cream.

Figlet – Pistachio Oil, Mortadella, Robiola Cheese, Shoestring Apples, Honey-spiced Figs, Pistachios, Truffle Oil

Using the hashtag #servinghappiness, as accurate a description as any for the life of a Pizzaiolo, it was during a September downpour that shelter was found inside Red Wagon Pizza Company, Peter Campbell’s lifetime of making and eating Pies in the Midwest finally finding a brick and mortar home at 5416 Penn Avenue South after growing a fanbase at The Linden Hills Farmer’s Market.

Open from 11a-10p daily and getting a boost in popularity from Diners, Drive-ins, & Dives, the new space and custom oven really none of the above but fame by way of Fieri nonetheless welcome, it was with greetings from a young woman that any seat in the house was offered, a comfy booth near the window quickly decided upon and Water filled as the menu was presented along with a list of specials.

Stating “As opposed to saying Housemade next to everything…we are a scratch kitchen” at the top, a collection of Appetizers, Pizzas and Pasta all tempting, it was with the good fortune of Pizzas offered half-and-half that an order was composed, the space rapidly gathering more guests as lunch hour approached.

Highlighting items featured on TV with a goateed icon, though alternative choices on this particular visit read more appealing, it was after perhaps ten minutes that a plate of Pepperoni Rolls arrived, the Crust originated in Dearborn Michigan and brought to Minneapolis stretched thin and layered with Meat and Mozz beneath reduced Balsamic intended to be dunked in a Marinara sidecar.

Impressed by the amount of Yeast tasted amidst char and toppings, the Flour presumably a blend given its ability to become extra-crisp amidst high temperatures while retaining a great deal of stretch, it was just as Rolls were nearing completion that Red Wagon’s lone size of Pizza arrived, the 16” diameter made to feed at least two all blistered and beautiful with the Menu-staple Popeye showing nicely thanks to light Citrus on Sausage and Spinach while “Figlet” balanced sweet and savory nicely amidst an array of textures, though past one slice the Truffle Oil became overwhelming.

Isles Bun & Coffee

Puppy Dog Tail with Cream Cheese Frosting

Caramel Pecan Bun

Open at 6:30am every day but Sunday, the bakers allowed an extra half-hour of shut-eye on that one, it was Tuesday around ten that Isles Bun & Coffee was found busy, a line of three waiting to place their order while at least twice as many were already parked in the nostalgic space eating, reading the paper or conversing with friends amidst air heavily scented with Cinnamon and Butter.

Originally opened in 1993 and under the same ownership since 2000, a focused menu and smiling employees creating the sort of place where regulars go daily and out-of-towners are brought for an authentic taste of The Twin Cities, it is after a brief wait that guests are left to choose between sizable Rolls, Cakes and Cookies, the most obvious choice spelled out in the name though even then there are decisions to be made.

Charged as individual Buns or whole Pans, prices between $4-$5 for singles made of all-natural ingredients and served in enormous portions, it was opting for a Bun topped with gooey Caramel and Pecans plus one “Puppy Dog Tail” that a seat was taken, the DIY canister of Cream Cheese Frosting a bonus for those who really like things extra sweet.

Beginning with the Tail as the Bun was actually still too hot from the oven, $1.50 in this case buying a braid of Dough that bakes up golden with light yeastiness and plenty of Cinnamon Sugar, it was after a spread of Icing that the twist was quickly dispatched, each of three bites a little different but equally good and in reality better than the Bun itself which starts out great but gets monotonous quickly as the center is mostly just plain Dough…though perhaps that is precisely the point of the self-service Frosting.

Pancake with Black Walnut Butter and Pure Maple Syrup

Advertising “fine Food in a fine enough setting” it was for Breakfast on Tuesday that a table at The Kenwood was occupied, its location not far from sizable homes surrounding Lake of the Isles creating a clientele of well-heeled regulars at Chef Don Saunders’ Restaurant opened in 2012.

Designed to be a three-meal neighborhood eatery but gathering enough acclaim over time to attract attention from throughout The Twin Cities, rollover Menus from 8am until nighttime Tuesday through Sunday offering everything from Coffee and Pastries to Wild Boar Pappardelle, it was just prior to 10am daily Brunch that the decision was made to focus on sweeter selections, a bottomless cup of Coffee treated as such while light music played overhead in a space rich in plaid and wood.

Not waiting long to begin, only two tables occupied as Chefs busied themselves with mis en place for later, it was along with the first refill of piping hot brew that two Pastries arrived, the Banana Bread unfortunately a bit dry but improved by Salted Butter while the Black Walnut Coffee Cake suffered in no such way by being rich and moist but not too sweet thanks to Black Walnuts not only on top but blended into the Batter.

Continuing further with the Black Walnut theme to finish, a light rain now falling outside, it was in order to preserve stomach space for additional eating that one Pancake was ordered instead of three, the $5.00 plus one extra for Walnut Butter and Pure Maple Syrup worth every cent thanks to an airy yeasted base that is served bronze and crisp, though had one known it was this good ahead of time the larger stack for $11 would have been worth the extra cardio.

Dirt and Worms Cake Donut

Open all but major holidays since 2010 in the quiet suburb of Minnetonka, accolades rolling in from various sources claiming that a twenty minute drive from Downtown Minneapolis was necessary to taste Minnesota’s best Donut, it was early Tuesday morning that GPS was calibrated to find a small place in the middle of a Strip-Mall, YoYo Donuts’ patronage around 7:00am largely comprised of Senior Citizens plus a father with his pre-K son.

Family owned and operated from the start, an old recipe descended from one man’s Grandfather the base upon which business was founded with plans to make each Donut daily from scratch, it is shortly after entering that guests are greeted by pleasant staff positioned behind glass cases, the daily variety neither as expansive nor expensive as the likes of Glam Doll, Mojo or Cardigan.

Focused largely on classics but not opposed to newer ideas like Maple Bacon or Red Velvet, a mixed half-dozen felt sufficient to gauge quality with first bites of a fluffy ring beneath Raspberry Frosting attesting to blended Flours left to leaven longer than most, it was from here that tasting transitioned to the oft-photographed “Dirt and Worms,” a thin layer of crumbled Cookies mostly what would anticipate while the Cake itself was unfortunately dry and crumbly instead moist.

Discarding the Gummies along with all but one bite of the Cake, a follow-up Old Fashioned not faring much better and lacking any tanginess beneath good Maple Frosting, it was from here that praise again began to seem justified with the Crème Brulee offering diversity of textures and flavors without compromising the surrounding Donut’s texture one bit.

Rounding out the morning with dueling Fritters, the flower-shaped Cherry placing layers of Jam between “petals,” it was with actually the more traditionally shaped version that would prove best thanks to a plethora of Apples and Cinnamon surrounded by soft Dough shellacked in Glaze that manages to penetrate deep without becoming soggy.

Black Sesame Cake – Concord Grape Sorbet, Caramel

Petit Fours – Strawberry Macaron, Fig Newton, Chocolate-dipped Biscotti, Lemon Cake, Berry-Vinegar Pate de Fruit

Now approaching its fourth anniversary of service there was no doubt Spoon and Stable would figure into the Minnesota dining itinerary, Chef Gavin Kaysen having just returned from an event in California to join Executive Chef Chris Nye inside an open kitchen where local ingredients are transformed into elegant plates that build complex flavors through unique combinations while still focusing on its owner’s French training.

Called Spoon and Stable thanks to the Restaurant’s position inside a renovated space for Horses, Kaysen explaining at one point during the meal that Wine is stored in underground cellars discovered serendipitously during a construction process that has created a high-ceilinged room which is rustic yet upscale and lined with art, it was declining a reserved table in favor of a spot at the Chef’s counter that a seat was taken, each station working diligently to feed a fully packed room on Monday night.

Ironically sat next to a businessman from Nashville who was also familiar with Gavin’s cooking from Cafe Boulud, a similar sensibility as relates to flavors and presentations brought back to Minneapolis indicative of precisely why Chef Kaysen is mentioned amongst America’s most talented Chefs, it was from servers who balanced humor with professionalism that Bread was served, a housemade Whole Wheat Sourdough reminiscent of Keller’s Epi at Bouchon but built of locally milled Flour and served with a liberal smear of Whipped Butter.

Described as a “Midwest” Restaurant but probably better thought of as globally influenced and built on classic technique, a Rice Ball perfumed with Truffles atop Fontina Fondue awakening the palate, it was soon thereafter that a contribution from The Great Lakes gifted diners with Croquettes stuffed by Walleye and Potatoes in the style of Brandade, each one given levity by the acid and salt of Sauce Gribiche.

Happily allowed to sample items from the Bar menu in addition to larger entrees and appetizers, a similar way of ordering employed at Bellecour to enjoy more variety, it was as Radiohead played overhead that “Sliders” featuring Duck Meatloaf lacquered in Tamarind Glaze arrived, the Celery serving to keep richness in check just as Radishes and a spritz of Mango Vinegar would the generous slice of Foie Gras that arrived next with roasted Carrots.

At this point making tough choices, prices that might seem “high for Minnesota” actually a bargain for sizable servings of top quality Meat and Produce prepared with such attention to detail, it was with expletive-inducing-good housemade Pasta and ‘Nduja produced on-site that savories wrapped, the program at this point turned over to Chefs Diane Yang and Alexandra Motz who’d been busily working without hardly a moment’s rest throughout the evening.

Torn between four choices but with limited capacity after a long day, the decision thus deferred to a server who suggested one old and one new, suffice it to say that all the praise heaped upon Yang’s Honey and Cream Cake is deserved for rethinking Tres Leches to be less Sweet and more texturally compelling while a Black Sesame Sponge topped in vibrant Concord Grape Sorbet and Caramel continued in the same vein as Kaysen’s plates by taking ingredients not previously seen together and making one wonder why no one ever thought of it before.

Finishing up with Petit Fours, the Lemon Cake and invigorating Pate de Fruit both memorable at the end of a meal that did not lack for highlights, it was with a bill less than half what one would expect in New York paid that guests departed, the fact that Spoon and Stable could easily rest on its laurels as a “big fish in a small pond” thankfully not at all the case as Kaysen and his team are producing Food that would thrill diners in any major market on either coast or in between.

Syrnyk

In an era charged with bipartisan politics and discussion of what it actually means to be American there still remain several Restaurants that define a time when “the American Dream” was less divisive, and on Monday before dinner elsewhere Kramarczuk’s Sausage Company proved to be precisely one of those places built on the time and talents of immigrants who came to call this country home.

Founded by Wasyl Kramarczuk in 1954 and a Minnesota icon ever since, the former Deli and Bakery later adding seating and earning a prestigious James Beard Foundation America’s Classic award in 2013, it is inside a sizable building located on East Hennepin Avenue that guests will find a space offering images of the United States alongside Ukrainian ornaments while being tempted by everything from Cabbage Rolls and Sausage to Loaves of Bread and Pastries.

Focused on Eastern European classics made without shortcuts, the recipes created by Wasyl and wife Anna still used with local ingredients incorporated whenever possible, it was after a lengthy perusal of items offered from the Deli that the dining room was entered and whether Caucasian, Hispanic or otherwise servers were all friendly and well informed with smiles on their faces.

No doubt a place that would require several visits to formulate a comprehensive opinion, the sheer volume of scratch-made items clearly indicative of a labor-intense operation, it was after some debate and gauging of hunger that decisions were made, deference to a young man at the counter proving worthwhile in each and every bite.

Sad to set aside Cabbage Rolls and several sweets, the former deemed too filling while “what’s the most unique?” determined one of the latter, it was after paying and taking a seat that plates were delivered, the Sausage requested without its Roll immediately impressive as snappy casing gave way to smoked Pork riddled with rendered Fat and plenty of seasoning.

Focusing next on Dumplings, $1.50 for each handmade Pierogi an undeniable bargain considering both size and quality of Filling, it was no surprise that a blend of Beef and Pork bested Potatoes and Onions even though both were beautifully pan-seared, and as it turns out the young man who was neither Ukrainian nor “White” turned out to be precisely correct in his Dessert suggestion as Ukrainian Cheesecake called Syrnyk was springy and smooth as it melted across the palate without being too sweet.

Boasting over 100 flavors in their arsenal, each made of high quality ingredients in small batches daily, it was midday Monday that a stop was made at Sebastian Joe’s Ice Cream and although fairly quiet at that time both service and product attest to a company committed to doing things right.

Located at 1007 West Franklin Avenue and a community staple since 1984, the Scoop shop since adding a Coffee Roaster and Bakery to a sizable storefront styled like an old-school Soda Fountain, it was shortly after entering that two employees paused their duties to offer greetings, a tasting to follow including classics like Butter Pecan and a formidable Salty Caramel plus Pavarotti which tastes like a Banana blended with Vanilla and Caramel with Chocolate Chips adding texture.

A favorite of Uptown but originating on Upton Avenue in South Minneapolis, a historic budgeting issue and Minnesota’s extremes of weather gifting that area with particularly bad roads, it was finally deciding on the famous Nicollet Ave. Pot Hole atop a fresh Waffle Cone that an order was placed, the Dark Chocolate base finding added richness in Fudge and crumbled Heath Bar kept in check by occasional grains of Sea Salt.

Open at 7am daily, a bonus for those who feel there is no wrong time for Ice Cream, it was additionally from a collection of Pies, Cookies and Pastries that two Bars were selected, one named after an employee offering New Orleans-style Pralines and partially dried Cranberries particularly alluring while the seven-layer square named for another local road was also enjoyable though a bit one-note thanks to an abundance of Coconut.

Murray’s Restaurant

Bread Basket – Garlic, Rye, Pretzel, Cheese Stick, Butter

Murray’s Original Steak Sandwich – Medium-Rare Strip Sirloin Steak, Bacon, Provolone Cheese, Sourdough

Au Gratin Potatoes

Murray’s Raspberry Pie – Housemade Whipped Cream

Serving The Twin Cities since 1946 and famous for the hulking Silver Butter Knife Steak it was with a bit less Beef in mind that a table was booked at Murray’s Restaurant, the longtime fixture of downtown Minneapolis exactly what one might anticipate but without the gruff service of Luger’s or other “institution” Steakhouses in New York, Chicago or even Tampa Bay.

Located at 26 South 6th Street and just steps from City Center, a narrow façade that shows its age disguising what is actually a voluminous interior from front to back, it is after passing by a well-stocked Bar that guests are greeted by the host, confirmation of reservations followed by seating in a high-ceilinged room flanked by Wine.

Shortening the menu at Lunch while adding a few items for those looking to dine lighter, the option of a half-Sandwich and Soup combo seemingly popular at nearby tables, it was entirely in classics that a $30 tab was invested, the complimentary Bread Basket highlighted by crispy Garlic Squares and cheesy Batons while Pretzels were unfortunately doughy and flavorless.

Playing era appropriate tunes and still prone to Parsley garnishes, both adding to the ambiance as Men in suits talked business, it was after reading Murray’s story from a small pamphlet that entrees arrived, the Au Gratin Potatoes taking their time to cool and as rich as one might expect while “Murray’s Original Steak Sandwich” arrived cooked as requested and loaded with Prime Sirloin topped by melted Provolone Cheese plus Bacon.

Miles away from #trending hashtags, but at the same time still putting on their own style of show, it was after another brief wait that the meal concluded with Murray’s Raspberry Pie and although predating Instagram or Facebook by more than half a century the fresh Fruit with almost no added Sugar or binder was every bit as delicious as it looked.

Cardigan Donuts, Minneapolis MN

Cardigan Donuts

Free Coffee

Glazed Old Fashioned Donut

French Cruller

Blackeye Coffee Cake Donut

Bourbon Apple Fritter

Vanilla Blossom with Vanilla Bean Custard, Vanilla Bean Icing, Candied Orchid

Lemon Meringue with Lemon Curd, Toasted Meringue, Pie Crust

Located inside the City Center Skyway, a location likely known to Minnesotans looking to avoid frigid Winter weather but not entirely obvious from the address on Google Maps, it was as part of a search for The Twin Cities best Donut that Monday led to Cardigan, the shop now open for just over a year found largely empty save for employees though a few professionally dressed folks en route to the office did stop by from time to time.

Opened in May 2017 by Justin Bedford and Jeff Bull, two downtown denizens who tapped the skills of baker Daniel Rosene to create recipes focused on classics it is on the right side of a substantial space that guests will find rows of Fried Dough, the additional offering of Greek Yogurt and Oatmeal topped to order an interesting addition as is a collection of locally produced goods lining the opposite wall.

Somewhat stark in terms of decor besides the aforementioned, a situation probably less noticeable when the place is more busy and the only focus is not overhead Pop Radio, it was after surveying the day’s line-up that six items were selected, a free cup of Coffee from Black Eye Roasting Co. showing well with good body and Caramel notes that paired well to first bites of an Old Fashioned that was sloppily glazed and far less impressive than that at The Bachelor Farmer Café, though admittedly over $1 less expensive.

Moving next to a Cruller, good amounts of Egg appropriately still tasted throughout its wispy interior, it was next with a crumbly Cake Donut topped in Coffee Frosting that Cardigan stumbled, some reprieve found amidst a Fritter described as “Bourbon Apple” though a dearth of Fruit rendered the center somewhat dull in comparison to a crisp and sugary exterior.

Rounding out the morning with two of the more expensive “Inspired” options, a Bismark stuffed with rich housemade Custard and topped with a candied Orchid Blossom easily Cardigan Donut’s best option on this day, it was finally with Lemon Meringue that curiosity was satisfied, a poor piping job seeing only perhaps half the Longjohn actually filled with Lemon Curd and telling once again of a place that doesn’t pay attention to small details despite premium pricing.

The Bachelor Farmer Café

Corn Muffin with White Cheddar, Friesago, Cream Cheese

Chocolate Croissant

Sticky Bun

Sourdough Old Fashioned Donut

Cinnamon Coffee Cake

Chocolate Chip Cookie with Toffee, Fleur de Sel

With only limited time in Minneapolis it was after many tough cuts that The Bachelor Farmer was moved from Dinner to Breakfast, a visit to the Café shortly after opening finding several “work from home” sorts sipping Coffee behind their laptops while a bounty of Baked Good beckoned from behind glass on the countertop.

Owned and operated by Eric and Andrew Dayton, an atypical path leading each to a career in the Restaurant industry where their small space at 200 North 1st Street has thrived mere steps from Gavin Kaysen’s landmark Spoon and Stable, it is immediately on entry that guests are greeted by a hand-written daily list, everything both sweet and savory prone to season and on this day clearly telling of impending Autumn.

Told by trusted friends that if either Bostock or Chocolate Croissants were available they should be ordered, an absence of the former but several equally tempting choices leading to a six-piece ensemble, it was with $25 exchanged that box and plates were taken to a narrow bar, the fact that the Corn Muffin and Croissant were each still warm making them tastes 1a and 1b with the Cornbread soft and crumbly around pockets of Cheese while the Croissant lived up to its billing thanks to shattering shell and a thick core that did not compromise honeycombing lamination.

Moving onward to a Sticky Bun that would have fared better warm, though the eggy Brioche baked golden certainly was not bad, it was finally at The Bachelor Farmer that a respectable Old Fashioned Donut was found in The Twin Cities, a subtle hint of sourness permeating soft Cake with just the right amount of Glaze added at the right time to let it soak in just a bit.

Rounding out the morning with a Cookie and classic Coffee Cake beneath Cinnamon Streusel, a substantial amount of good Butter no doubt used in each, suffice it to say that in an era where “salted” or “salty” sweets are en vogue the combination of Chocolate Chips, Toffee and Fleur de Sel is another item that should be added to the “must order” list as it progresses from crisp edge to soft center with no two bites exactly the same but all of them equally great.

Milkjam Creamery, Minneapolis MN

Milkjam Creamery

Samples: Hard Knock Life 2.0, Toasted Coconut, Black

Double on a Waffle Cone: Ridin’ Duuurty – Oreo Milk, Oreo Chunks, Salted Peanut Butter / Strawberry Shortcake – Strawberry Sherbet, Nilla Wafer Ice Cream

Although Milkjam Creamery is a relative newcomer in comparison to Izzy’s and Sebastian Joe’s there is little doubt after visiting all three that these folks are operating on a whole different level, the About section on their website simply stating “We make ice cream…” avoiding all pomp and circumstance just as the small scoop shop at 2743 Lyndale Avenue South eschews decor save for a single neon sign in order to allow the product to speak for itself.

Now open since early 2016, a year in which accolades that have yet to slow steadily began to accrue, Milkjam Creamery is owned and operated by local Restaurateur Sameh Wadi and bringing a personal history of Lactose intolerance to the game one can expect a great degree of creativity across sixteen daily flavors, a good portion typically Vegan friendly including the dazzling Sorbet simply titled “Black” which features four styles of Chocolate and Cocoa Powder just barely reined in by Coconut and Almond Milks but no added sweetener.

Known for clever names often based on pop-culture, Hard Knock Life 2.0 or Uma Thurman also part of this visit’s collection, it is from scratch each day that Bases are made on-site and set now for expansion to a classic building in South Minneapolis none of that seems likely to change, a fact that could potentially mitigate lines that stretch out the door during warm weather.

Sampling convincing Toasted Coconut plus some of the aforementioned, Black in particular outperforming expectations, it was with tough choices made that two sizeable scoops were loaded atop a housemade Waffle Cone, one called “Ridin’ Duuurty using Cream steeped in Oreos as it base before adding heavily salted Peanut Butter and whole Cookies which retain much of their texture while seasonal Straberry Shortcake may just be the best Ice Cream tasted in years thanks to a Soft Serve-reminiscent twist of jammy Strawberry Sherbet and Ice Cream virtually indistinguishable form the flavor of Nilla Wafers.

Hazelnut Profiteroles – Coffee Ice Cream, Caramel

Cold Brew Coffee

Blueberry Frangipane

Almond Croissant

Almond Croissant Bread Pudding

Pistachio Macaron

Opened by Gavin Kaysen early 2017 in the quiet town of Wayzata, approximately twenty minutes from downtown Minneapolis by car, Bellecour looks to bring a sense of Lyon to North America and in so doing also act as a tribute to mentors Paul Bocuse and Daniel Boulud by focusing on simplicity but also refinement and classic technique.

Easily thought of as a follow-up to the success of Spoon and Stable, Kaysen’s still red hot Restaurant in Minneapolis where local ingredients take center stage, guests approaching Bellecour will quickly notice that the space itself bears little resemblance to its sibling and more to a farmhouse, though once inside there is certainly no lack of style whether it be amidst the well-appointed dining room or more casual Bakery and Bar.

Youthful in terms of staff and feel, though patrons trend at least two decades older than what would be seen at S&S twenty-four hours later, it was from a pleasant young woman with a nose ring that Ice Water was poured and menus presented, the decision to sit at a comfortable banquet in the Bar area made largely in order to have access to Happy Hour bites, though the entire Dining Room selection is available there as well.

Using low decibel French tunes to quiet the din of other diners, a Sunday evening during the school year still seeing the space mostly filled shortly after opening, it was ordering in rounds that dinner began with a Deviled Egg Amuse, the bold blend of Herbs and Onions rising high before quickly dissipating and shortly thereafter followed by crispy Duck Legs dressed in Citrus plus six Fritters featuring tender Salt Cod inside a dainty golden Shell.

Happy to hear that Chef de Cuisine Nick Dugan had picked Duck as Bellecour’s Pate du Jour, the former Mina-man serving Confit beneath a creamy layer of Liver Mousse and Apples, it was with bites spread on Bread soon gone that two more plates arrived, textbook Pommes Dauphine marrying Choux with Potato over melted Cheese with a nose of Truffle while three-bite Croques replaced toast with housemade Brioche and Hen Eggs with sunny-side up specimens from a Quail.

Debating at this point whether to continue savory or veer sweet, Pastry Chef Diane Yang’s newly debuted Dessert menu and some Pastries still available from the bakery simplifying the decision, it was with Cold Brew Coffee in hand that an atypical Vacherin proved pleasant and light before indulging in peerless Profiteroles, though if one were to look for the best sweet selection from this visit it would most certainly be re-warmed “Blueberry Frangipane” that eats like Clafoutis and makes far better use of Almond Paste than either a soggy Almond Croissant or Bread Pudding, though the Super-size Pistachio Macaron was none too shabby either.

Proudly promoting itself as “Minnesota’s most-book Restaurant,” a lines-beget-lines strategy that sees seating for what must be at least two hundred packed on weekends where those without reservations will often be asked to wait at least an hour, it was prior to a Vikings-Bills matchup at U.S. Bank Stadium that advanced planning scored a table at Hell’s Kitchen, the Restaurant predating Gordon Ramsay’s television program expectedly raucous even before live music began.

Now serving the city since 2002, an underground location on 9th Street Downtown over time becoming a destination for American Fare served amidst kitschy confines that remain whimsical despite the Restaurant’s name, it was to a seat immediately in front of the stage that Breakfast was served, a middle-aged man with plenty of ink offering a good blend of hospitality and professionalism that one usually does not expect at such a busy or “themed” place.

Owned by Mitch Omer and Cynthia Gerdes, her Angel Food Bakery upstairs just visited and often acting as a stand-in Breakfast for those turned away from Hell’s Kitchen, it is from the hands of Chef Steve Meyer and team that guests are currently fed from a wide list of everything from Pancakes to Burgers, a lengthy list of Beers by bottle or tap clearly popular amongst the pre-game crowd as was a $14.95 option to build one’s own “Jacked Up” Bloody Mary.

Opting instead for Coffee, a mug kept full of surprisingly good Drip throughout an hour long stay, it was shortly after asking a few questions that the meal began with Omer’s regionally famous Toasted Sausage Bread, the odd concoction featuring Fruit, Nuts and Spices a bit like Zucchini Bread riddled with the sapor and Salt of Pork that is as enjoyable as it is unique, though the richness makes this an dish best shared.

Intrigued by other “Minnesota Icons” including Walleye Hash and Rice Porridge, but working with limited capacity and more meals to follow, it was instead that course two featured one of Hell’s Kitchen’s Lemon-Ricotta Hotcakes, the flavor and texture fine but no different than versions offered elsewhere while the house’s take on a Jucy Lucy titled “Juicy Lucifer” costs twice that of Matt’s but is unquestionably better thanks to Prime Beef and a Brioche Bun plus tangy Red Pepper Jelly around the molten core.

Harvest Moon Donut – Yeast Donut, Orange Zest Icing, Pumpkin Spice Drizzle, Candied Spiced Pecans

Nutella Crunch Bismark – Nutella Filling, Chocolate Glaze, Cocoa Pebbles

Although Angel Food Bakery and Donut Bar has apparently performed well enough launch a second location inside MSP’s Lindbergh Terminal the original is certainly not easy to locate for first timers, an indoor storefront next to Hell’s Kitchen creating clever naming dynamics but its lack of exterior signage frustrating enough to necessitate a phone call in order to pay a visit before the Vikings game on Sunday.

Owned by Cynthia and Katy Gerdes and feeding The Twin Cities since 2012, a time predating Glam Doll’s debut leading one to assume a combination of location and lack of branding has held back the shop promising “Real people. Real ingredients. Real bakery,” it is quickly after entering doors that patrons will see Angel Food cares little about decor or being ‘Instagram-worthy’ itself, the workers all covered in Flour and doing hard work while the products themselves are left to stand in spotlights.

Small in standing room as the kitchen takes precedence, a few tables in the corridor outside constantly filled with enough seating for perhaps sixteen, it was after placing an order which required several items being rearranged that the reasonable tab was paid, a table suddenly departed offering plenty of room to spread out and enjoy six unique items beginning with Bread Pudding made of day-old Glazed Donuts saturated by Bourbon Custard with chopped Pecans and Caramel-Cream Cheese Frosting.

Wishing the sticky slice of Bread had been served warm even though it was delicious at room temperature, similar sentiments applicable to an item called “Lil’ Porkers” which studs golden nuggets of Brioche with Bacon, it was from here that Donuts took center stage, a world-class Cruller somehow lighter than Glam Doll’s despite being nearly 2-fold larger while a puffy Brioche ring offered its yeasty blank canvas to Fall flavors including Pumpkin, Cinnamon and Nutmeg.

Never one to pass up a Fritter, both the crisp shell and springy interior earning high marks though “New School” additions of Cherries and Walnuts were hard to find, it was last but certainly not least that a Nutella Crunch Bismark was enjoyed, the “Real Ingredients” quote questionable as relates to both Chocolate-Hazelnut Spread as well as Cocoa Pebbles but the taste rich and indulgent just the same.

Located at 2605 Nicollet Avenue South since 2013 and expanding to the Northeast in 2016 it was early Sunday morning that a visit was paid to Glam Doll Donuts, the supersized storefront at 519 Central Avenue largely empty though shelves were full of clever creations available in both Vegan and standard varieties.

Founded by Teresa Fox and Arwyn Birch, their self-described “happy place” surrounded by Pintrest ideas, pink chairs and white walls divided by floor-to-ceiling windows, it is with senses quickly saturated that guests are greeted by women standing behind glass cases where Donuts are arranged, each carrying its own price and description though cheaper by the dozen – or half – give larger orders added value.

Disappointed at first to realize Weekend Brunch does not begin until 10am, small print on the website overlooked and thus leading to a return later, it was finally settling on a dozen plus one complimentary that a seat was taken as music played overhead, the wait for a dish titled “The Bellybomb” proving worthwhile as molten Macaroni and Cheese poured forth from a fried ring with light herbs and great texture served on a bed of Potato Chips alongside its hole.

Moving next to a special, The “All Decked Out Girl Next Door” continuing savory but falling short of its potential as Cheese at the center was rubbery amidst a dull crumb, it was next that “A Sunday Kind of Love” also proved underwhelming, the Glaze pleasant but nothing about the Dough itself suggesting the use of Sour Cream or Buttermilk to keep the Cake from drying out.

Improving somewhat from here, a Fritter infused with Bourbon less crisp on the exterior than some but otherwise rife with Cinnamon and Apples, it was finally moving to Crullers that Glam Doll showed best, both “Flirty Frenchie” and “Pucker Up” proving light and eggy with the toppings also appropriately applied as not to weigh either down.

Interesting to see Potato Chips added to Glam Doll’s PB&J Bismark, an idea witnessed for the first time and done better at Mojo Monkey 24-hours prior, it was finally with the seasonal “Marvelous Maven” that a filled Donut performed well, a trend that would continue with “Femme Fatale” stuffed with tangy Raspberry Curd and the unexpectedly outstanding Salty Doll that uses Candied Grapefruit to tame the richness of thick Caramel Cream and Brown Butter Frosting.

Saving one Cruller for later, Icing and fragrant Streusel pleasant but not on the level of either whipped topping, it was once again that Night Moves proved Cake inferior to Yeast at Glam Doll, even Cognac and Blackberry Jam not able to keep the base moist while shop classics like Dark Angel and Calendar Girl both shined thanks to scratch-made filling surrounded by springy Dough.
