A part of the Bellagio since opening, first as Aqua but since reborn twice as MICHAEL MINA Restaurant, it was as The Strip shuttered that eight guests sat down for a meal never to be forgotten and now with the Pandemic but a memory the Restaurant remains remarkable under the direction of Chef Raj Dixit.
Always a special place, and quiet mid-summer, it was at a familiar table that five guests were situated just past to 6:00pm, Carte Blanche once again deferred to the kitchen who opted to prepare a menu of pure opulence.
Designed as an eight-course menu, with white glove treatment afforded to all in attendance, it was following a Champagne toast that the night started with Michael Mina’s timeless Caviar Parfait commanding attention from black Eggs to crispy Potato Cake with palates cleansed between bites by Belvedere Vodka.
Delivering Mina’s housemade Laffa next, the first of two baskets complimented by a trio of Spreads, Hamachi arrives next with Peruvian inspiration preceding faultless Foie Gras with seasonal accompaniments alongside warm Brioche.
Next revealing tender Gnocchi under a cloche before a liberal shaving of Australian Truffles, the fragrance better than most, semi-sweet Riesling proved well-suited to “Fish n’ Chips” utilizing Black Cod followed by a perfectly cooked piece of Duck with crackling Skin.
Not holding back with triple-seared A5 Kagoshima Wagyu plated simply with classic Bordelaise, or the Prime Filet Rossini at its side, Dessert is always an all-in affair on this evening finding Michael’s famous Root Beer Float alongside “The Lemon,” Chocolate Mousse, Mango Sunset and a Souffle standing tall.
