In a city that hosts some 40-million guests annually it goes without saying that Las Vegas truly offers something for everybody, including at Christmas, and for those visiting The Bellagio there remains a secret beyond the beautiful conservatory in the form of a special dim sum brunch offered at Jasmine from December 25th through January 1st.

Unadvertised save for a colorful board outside the Restaurant, a second celebration taking place during the Chinese Lunar New Year, it is approximately fifteen minutes prior to an 11:00am opening of etched doors that guests begin queuing, never mind the fact that most have reservations but rather for the chance to sit with an unobstructed view of Bellagio’s famous fountains.

Billed at $68.88 per diner (and just $20.00 for children,) far lower than Jasmine’s equally splendid dinner, it was after seating by familiar staff including Connie Shin that four guests stood to begin perusing nearly ninety choices spread across a variety of Buffet and Live Stations.

Truly a grand display, traditional Dim Sum and Cantonese classics lined up alongside items decorated in luxury ingredients, it would not be long before most early arrivals returned to their table with plates full, fresh Oysters and Crab Legs a popular choice amongst the largely Asian crowd though many also gravitated towards a display of baked and fried Dim Sum that this year included Maine Lobster, Lotus Sesame Balls, dainty Cheese Tarts and Purple Yam Mochi in delicate Pastry.

Continuing till 2:30pm, even those with a prodigious appetite unable to sample everything from cold Salad with Jellyfish to succulent Prime Rib, one of 2019’s special attractions was the return of Peking Duck, a dish that can cost well over $100 at Blossom or China Tang here cut-to-order and all-you-can-eat with a bevy of traditional Condiments.

Including Coffee, Tea, Soft Drinks and Fresh Juice in the price, with a substantial Wine List available to those interested, additional highlights include everything from hand-cut Prosciutto and Rack of Lamb to Congee, or made-to-order Noodle Soup, Silken Tofu and Clam Chowder for those so inclined.

Spending most of the time on Dim Sum, experts trained both domestically and in Macau producing a spread that changes subtly through the week, fans of steamed items will likely love Jasmine’s Sticky Rice wrapped in Lotus Leaf as well as Scallop stuffed Tofu with Black Bean Sauce, though Har Gow and Shumai are each also available for traditionalists.

Continuing with Miso Baked Sea Bass and Freshwater Eel Toast, both new this year, it was upon finding Squid Ink Custard Steamed Bun painted with gold that several were enjoyed, though not so many as to forget two more rounds of Peking Duck and crispy-skinned Pork Belly.

Opting for more Cheese Tarts, Sesame Balls and Steamed Buns with Dessert, but also tasting most of the options from Jasmine’s Sweets display, best bites predictably came from the same Macarons served at Le Cirque plus puffs of Choux, a flaky Egg Tart and rich Chocolate Raspberry Fudge Cake.

FIVE STARS: Although Las Vegas’ Dim Sum scene improved tremendously in 2018, both Mott32 and China Tang bringing their Hong Kong brands to Sin City, there remains no other time or place to experience such variety and quality as Jasmine during their annual celebration of the Christmas and Chinese New Year.

RECOMMENDED: Peking Duck, Roast Pork Belly, Steamed Eggplant with X.O. Sauce, Sticky Rice with Chicken wrapped in Lotus Leaf, Scallop stuffed Tofu with Black Bean Sauce, Ginger Chicken Congee, Miso Baked Sea Bass, Freshwater Eel Toast, Squid Ink Custard Steamed Bun, Maine Lobster Pastry, Lotus Sesame Ball, Cheese Tart, Purple Yam Mochi Pastry, Raspberry Macaron, Vanilla Macaron, Egg Tart, Chocolate Raspberry Fudge Cake, Chocolate Choux, Pistachio Choux.

AVOID: Strawberry Mochi tastes like Starburst and the appeal of warm Seafood Salad is probably a matter of personal preference.

TIP: Offered yearly from 12/25 through 1/1. Reservations recommended but not required and early arrival likely to assure best seats.

WHAT THE STARS MEAN: 5 World Class, 4 Excellent, 3 Good, 2 Fair, 1 Poor.

Candied Orange and Milk Chocolate Velvet Dome, Honey Glazed Chestnuts, Chestnut and White Truffle Gelato

“Collection of Christmas Classics” with Milk Chocolate Nutella Yule Log with Egg Nog Gelato, Red Velvet Tiramisu with Cassata Siciliana Gelato, Warm Gingerbread Chocolate Pudding Cake

Although Veranda at Four Seasons Las Vegas did away with dinner service earlier this year, Christmas saw Chef Sandra Palomo and her team put forth a generous four course Prix Fixe served with the brand’s expected professionalism.

Located just off the luxe-Hotel’s lobby, an elaborate Christmas tree greeting guests entering through valet or via spiral stairs from Mandalay Bay, it was with reservations confirmed that two diners were seated with a poolside view, Dinner starting promptly with Bread from the bakeshop including Sugar-studded Brioche typically offered during weekend Brunch.

Only a quarter full for the holiday, the fact that many locals do not even realize Four Seasons Hotels and Resorts owns property in Las Vegas making it easy to assume a crowd of mostly well-heeled tourists, the combination of two diners and two choices of Appetizer made decision-making simple, the Roasted Winter Vegetable Goat Cheese Tart a lovely composition that ate light thanks to Acid and Pomegranate Arils while those seeking their “money’s worth” gladly gravitated to an iced Shellfish platter with Oysters, Crabs and Prawns.

Continuing with Soup, Christmas’ only course without a choice unquestionably a highlight thanks to the silken Potage floating fragrant Cream, it was after scraping every bit from the jar that Entrees arrived, two sizable servings with at least eight ounces each of Meat, though Vegetables, Starches and Sauce were equally compelling in both cases.

Served in just over an hour, an agreeable pace to friends who typically eat quickly, Dessert again offered a choice, the “Milk Chocolate Velvet Dome” a bit lacking in comparison to its Truffle and Honey Accoutrements while picking a winner between the Nutella Yule Log, Red Velvet Tiramisu and Gingerbread Chocolate Pudding Cake was a toss-up.

N/A: Difficult to “rate” as the meal was not a typical representation of Veranda’s cooking, suffice it to say that all-things-considered this was an exemplary spread at a fair price, and hopefully a sign of things to come from recently acquired kitchen staff.

RECOMMENDED: Roasted Winter Vegetable Goat Cheese Tart, Late Harvest Winter Corn Chowder, Slow Roasted Turkey, Slow Braised Beef Short Ribs, Collection of Christmas Classics.

AVOID: Candied Orange and Milk Chocolate Velvet Dome was falling and a bit acrid, though the Chestnut and White Truffle Gelato was exemplary.

TIP: Cost including Soft Drinks and Coffee was $70pp.

Let’s face it, when a Restaurant occupies real estate across from The Bellagio Fountains they really don’t need to try *that* hard, yet from the moment HEXX Kitchen + Bar debuted inside Paris Las Vegas a new standard for 24/7 dining was born.

Rapidly approaching five years since replacing Sugar Factory, and two years post-separating into HEXX Kitchen + Bar with Alexxa’s Bar next door, it was in the main dining room that guests were seated at 11:00am, the fourth Christmas in five celebrated with AGM Ari Stotland leading a talented and friendly service team.

Less busy than the average weekend, but still more than 3/4 full even when including outdoor seats in 45ᵒF weather, it was while upbeat Christmas favorites played overhead that menus were perused, three courses preceded by Coffee, and starting with HEXX’s generous Fruit Plate.

Most recently spending time revamping the Alexxa menu, a bit of “if it’s not broke don’t fix it” applied to HEXX, particularly at Brunch, additional starters included homemade Granola and Yogurt with macerated Berries plus the “Cinnaroll Waffle” that has seemingly only gotten better in terms of softness beneath the Cinnamon-Sugar and Frosting.

Trekking savory next, a bit of heat included in everything but crispy Spuds with Salt and Parmesan, it was by request that Matt Piekarski’s Crispy Broccolini made an appearance from the Dinner menu, nearly every bite consumed by one diner while others focused on Squid given the Buffalo Wing treatment and smoky Chilaquiles.

Happy to use Chicken & Waffles as a transitional pate, pieces of Waffle, fried Bird and Pickle dunked in Syrup touching every part of the palate, more sweets arrived after a moment’s respite, Red Velvet Cake celebrating one guest’s birthday with a candle but the best bites neck-and-neck between HEXX’s world-class Carrot Cake Pancakes and Pastry Chef Miranda Prince’s Blueberry Corn Cobbler that is hot, cold, crispy, gooey, sweet and salty all at once.

FIVE STARS: At this point a proper ‘tradition’ with no plans to divert course for many years to follow it is places like HEXX Kitchen + Bar that truly make Las Vegas stand out as a holiday travel destination, their service every bit as welcoming as any other day of the week and the menu full of crowd-pleasing favorites for almost any age, race and city/county of origin.

RECOMMENDED: Fruit Plate, Carrot Cake Pancakes, Chicken & Waffles, Crispy Broccolini, Chilaquiles, Blueberry Corn Cobbler.

AVOID: N/A.

TIP: Open 6:00am until 12:00am while Alexxa’s Bar greets guests from 9:00am to 6:00am. See website for specific offerings at each during those times.

Big B’s Texas BBQ 2 [2,] Las Vegas NV

Big B’s Texas BBQ 2

Hand Cut French Fries, Cream Corn, Pickles, Onions, Jalapenos

Lean Brisket, Fatty Brisket, Beef Hot Links, Baby Back Ribs, Mac & Cheese

Cornbread, Butter

Apple Pie, Pumpkin Pie, Pecan Pie, Handel’s Ice Cream

A reinvention of the former DW Bistro and Andres’, Big B’s Texas BBQ opened its second location just prior to Halloween, and on the Saturday before Christmas the Restaurant at 6115 South Fort Apache Road again showed why any discussion of local smoked Meat has began and ended with Brian and Natalia’s place since 2016.

Named after its Pit Master, and changing the long-held belief that Las Vegas is not a Barbeque town ever since the original opened in Henderson, Big B’s Texas BBQ features the work of Brian Buechner and Natalia Badzjo, the husband and wife team taking a hands-on approach to every aspect of the operation from build-out to driving in fresh piles of wood as needed from the Lone Star State.

Joined by former Marché Bacchus Chef Amanda Hamilton at location #2, the opportunity to bring Sin City’s best smoked Meat across town not left to chance by a team who has always adhered to high standards, guests entering location number two will immediately notice Brian’s handy work in wood tables and chairs flanking a full bar, the relic of Andres’ benefitted by a liquor license in addition to Beer, Soft Drinks and freshly brewed Tea.

Texas through-and-through in terms of décor, the bustling main room offering a full view of the kitchen while Brian and Natalia have opened up the Restaurant’s right half with big screen televisions in each corner, it was in the latter that eight diners were seated, the Niners and Rams on television complete with play-by-play.

Ready to make new fans, and busy compared to other Restaurants on the year’s shortest day, it was on individual trays that Meats, Breads and Sides arrived quickly, the housemade Cornbread particularly soft when warm and delicious whether plain or slathered with Butter.

Evidencing Ms. Badzjo’s work in the hospitality industry with staff that is already cordial and well-trained, both Chef Hamilton and bussers checking in on tables frequently, it was while conversing and cheering that diners continued with hand-cut Fries and Cream Corn, the former arguably Sin City’s best while the latter is unfussy and delicious, just as it should be.

Going light on Sides, but not forgetting Mac & Cheese that continues to impress guests of all ages, it was from here that Meat took center stage, Big B’s Brisket following Texas protocol with little more than smoke and a bit of seasoning while Pork Ribs also went quickly with a slight pull of the teeth easily liberating supple Muscle from Bone.

Happy to see Hot Links on this visit, arguably Big B’s most overlooked item, it was after snapping through several encased bites that Dessert arrived, Chef Hamilton’s Chocolate Cake unfortunately sold out which left plenty of room for Apple, Pumpkin and Pecan Pie plus for scoops of Handel’s Ice Cream.

FIVE STARS: A fan of Big B’s Texas BBQ ever since Brian and Natalia opened the doors in early 2016, it is an absolute thrill to have Las Vegas’ best BBQ merely 10-minutes from home and three miles from the office. Occupying the old DW Bistro and short-lived Andres’ it is no surprise the entirely rethought interior is virtually unrecognizable, while the flavors brought from Texas to Vegas by way of Henderson are everything fans have come to expect and love.

RECOMMENDED: Fatty Brisket, Beef Hot Links, Cream Corn, French Fries, Corn Bread, Pecan Pie, Apple Pie.

AVOID: N/A.

TIP: Now open 11:00am to 9:00pm daily at Suite 110 of 6115 South Fort Apache Road, call (702) 844-8206 for take-out and the city’s best dollar-for-dollar catering value.

Focaccia – Olive Oil, Balsamic Vinegar

Pane Frattau Pizza – Sunnyside Up Eggs, Fior di Latte, Guanciale, Chili

Baccala Fritters – Housemade Salt Cod, Lemon

Milanese Sandwich – Breaded Veal, Tomato, Pepperonata, Basil Aioli, Arugula, Cacio e Pepe Chips

Potato & Caramelized Onion Crepes – Bacon, Dijon Crème Fraiche

Spaghetti Bolognese – Veal, Pork & Beef Ragu, Di Napoli Tomatoes, Parmigiano Reggiano

Nutella Crepes – Housemade Whipped Cream, Powdered Sugar, Bananas

Baked French Toast – Apples, Housemade Whipped Cream, Caramel

Plantation Rum Budino – Caramel, Sea Salt, Rosemary

Sicilian Cannoli – Italian Chocolate, Dried Orange, Toasted Pistachio

Now a part of Las Vegas’ neighborhood evolution for six months, it was during Saturday Brunch that guests sat down at Locale Italian Kitchen, Chef Nicole Brisson’s ode to regional Italian cooking now more focused and even plates that could be “simple” given the same sort of attention they were when she was leading a brigade at The Palazzo.

Quiet at 10:30am on the weekend before Christmas, several staff members taking vacation but Chef Brisson and Andy Hooper on-site as modern rock played lightly overhead, it was after greetings from the hostess that a four-top was offered, Iced Tea from a national brand unexpected considering Locale’s concept though Bottomless Mimosas for just $19 are likely a more popular option.

Featuring artisan imports alongside locally-sourced Meats and Produce to build a menu that is accessible yet interesting, it was after brief debate that nine plates were requested, deference on their order left to the kitchen with an oblong Pizza topped in fresh Mozzarella, Pork, Peppers and Eggs following slices of Focaccia that were arguably a little dry along the edges.

Seated beneath high ceilings, the dining room dim even as the bar area was bathed in sunlight, it was by special request that “Fritelle di Bacala” from Locale’s Feast of Seven Fishes were presented, Nicole’s description of salting, drying and reconstituting her own Cod nearly laborious as the Bolognese Sauce made from four types of Meat braised individually before being ground and slowly simmered with Tomatoes and Offal.

A combination Brunch-Lunch also available on weekdays, additional savories included Locale’s “Milanese Sandwich” which unfortunately contained a fairly tough patch at the center, though otherwise both it and housemade Chips were delicious, as too were springy Crepes wrapped around Potatoes and Onions with Bacon and fragrant Crème Fraiche on top.

Served at a good pace, with share-plates and utensils reset as needed, those seeking something sweet will be happy to know that both Nutella Crepes and Baked French Toast are offered daily, the latter fully saturated with Custard and all the better for it while true “Desserts” include flourless Chocolate Cake, creamy Plantation Rum Pudding and housemade Sicilian Cannolis with toppings on the side so that each guest may customize the Nutmeg-tinged filling to her or his liking.

FOUR AND A HALF STARS: Open for Brunch, Lunch and Dinner one need only listen to Chef Nicole Brisson’s description of her laborious Bolognese to know how much care has been poured into Locale – and that is just the start. From drying and reconstituting her own Baccala to hand-whipping Cannoli filling no task goes overlooked. Sure its location may dissuade the sort of aged curmudgeon who still feels the need to shout about past glory, but what Andy Hooper and Nicole have created at Mountain’s Edge is only getting better by the day.

RECOMMENDED: Pane Frattau Pizza, Baccala Fritters, Potato & Caramelized Onion Crepes, Spaghetti Bolognese, Baked French Toast, Plantation Rum Budino, Sicilian Cannoli.

AVOID: If the Focaccia is made on-site it needs to be stored better to keep from drying out, and enough with the bottled Tea from places doing everything else from scratch.

TIP: Lunch Monday through Friday from 11:00am-2:30pm, Brunch beginning 10:30am Weekends, and Dinner Daily from 4:30-10:00pm

Commemorating the end of #supportlocal year two, CRAFTkitchen once again served lunch at the office on Thursday, Tami and Jaret Blinn predictably arriving early with all the necessary items and this time taking diners on a culinary trip through Asia in addition to some holiday sweets.

By no means an “Asian” Restaurant, nor “Mexican” despite building an excellent Taco bar in May, it was around 11:15am that the hardworking husband and wife arrived porting several trays and bowls all maintained at appropriate temperatures, a Chinese Chicken Salad starting many off with shredded White Meat plenty moist amidst Cabbage, Sesame and Oranges.

Always well-portioned and fair-priced, a group of twenty-five getting their fill with plenty of leftovers packed to-go, it was alongside Veggies that guests liberally scooped heated Rice and slick Noodles, braised Short Ribs going well with either while cubes of Tuna atop creamy Avocados delighted those seeking something lighter.

Not forgetting sized-down “KFC Sliders,” the fact that Chef Blinn makes all of CRAFTkitchen’s Bread on-site allowing for tiny Purple Potato Rolls wrapped around Korean-style Tenders, Dessert only maintained theme through Kalamansi Ube Meringue Tarts before veering towards the holidays with Egg Nog Pot De Crème and rich Chocolate Buche de Noel.

N/A: Making it blog policy to not ‘rate’ places based on catering alone CRAFTkitchen has always gone the extra mile to assure off-site dining is every bit as delicious as inside the Restaurant on South Eastern, and on the final day of #supportlocal 2019 Jaret and Tami once again made every moment spent coordinating these meals worthwhile.

With tourism routinely down between Thanksgiving and Christmas it was alongside five colleagues that Dinner was enjoyed inside a quiet STRIPTEAK on Wednesday, the prix-fixe crafted by Executive Chef Anthony Schutz once again attesting to quality that has only improved since he took the wheel.

Now steered by Tony for over three years, and recently benefited through the addition of Vivian Chang as Pastry Chef for all Las Vegas Michael Mina Restaurants, it was minutes prior to 6:30pm that all guests were present, Mina’s trio of Duck Fat Fries soon joining a Tiki Drink titled Forbidden Lei that’s as sweet as it is potent.

At this time one of four local Restaurants for Michael Mina, and arguably the most whimsical despite upscale Steakhouse branding, it was while working through crispy Potatoes and complimentary Sauces that course one was presented, the Cornbread “Twinkie” housing Citrus Crème Fraiche that offers a vibrant backdrop to Kaluga Caviar without overwhelming it.

Keeping things simple for course two, raw Fish with textural additions showing careful restraint aside from a spicy Pepper slice, plate three stood in stark contrast to simplicity thanks to seared Duck Liver and a Donut Hole bolstered not only by Maple Syrup, but separated Arils and pureed Pomegranate.

Family-style henceforth, three Butter-basted Prime cuts grilled between Medium-Rare and Medium gone quickly, those seeking an alternative to Beef will be glad to know STRIPSTEAK’s Mediterranean Seabass compares favorably to Fishes served inside Michael Mina Restaurant at Bellagio while sides such as Vegan-friendly Brussels Sprouts and Pork Belly Fried Rice bring seasonality with the flavors of Cider and Five Spice, respectively.

Not forgetting classic Steakhouse sides like Creamed Spinach and Mashed Potatoes, though both are “cheffed-up” with the Lobster-whipped Spuds far better than others of their kind, it was after cleansing the palate with Coffee that Dessert began, the first of two trios highlighted by STRIPSTEAK’s world-class Beignets and creamy Panna Cotta that hints at Carrot Cake through both its crumbled top and bold Baking Spices.

Less thrilled by Mina’s Banana Tarte Tatin, the Pastry not crisp and flaky like that at Bardot even before Ice Cream began to melt, a far better use of Bananas was found in the Ice Cream alongside Chef Chang’s Pecan Dandy Cinnamon Roll while the “Funnel Cake Cheesecake” delighted thanks to varying textures from bite to bite.

Finishing with the Chocolate S’more and Oreo Ice Cream, a combination equally decadent as it sounds, it was with personalized menus and bags of Caramel Corn in hand that guests bid farewell, Mandalay Bay’s struggles still evident but STRIPSTEAK a destination worth seeking out for those bored with predictable Meats, Sides and Sweets.

FOUR STARS: Whether a result of location or Las Vegas’ abundance of upscale Steakhouses STRIPSTEAK often gets overlooked, yet through a combination of good Ingredients and clever presentations Chefs Schutz and Chang continue to push the envelope and take chances that other Restaurants can’t or won’t.

RECOMMENDED: Caviar “Twinkee”, Foie Gras Donut, Bone-In Ribeye, Mediterranean Seabass, Brussels Sprouts, Beignets, Spiced Mascarpone Panna Cotta, Funnel Cake Cheesecake.

AVOID: Sashimi remains excessively priced for what is served, and the Banana Tarte Tatin is an unnecessary “Mina Classic” in comparison to Chef Chang’s other creations or the Beignets.

TIP: Tasting Menu created via advanced request, and online Menus are (never) not currently up-to-date.

Aware that Russell Stover has somehow become America’s “go-to” for holiday Chocolates, more discerning palates are unlikely to be impressed by a box of waxy Bonbons, and although Sees as well as Ethel M are both available across Sin City the Valley’s best Cocoa confections are coming in boxes of 20 to 40 from Chocolatebuzzz.

Owned by Denise and Levi Elrod, who met in a Chocolate shop years before moving to Las Vegas, it was while working in casino kitchens that the former decided to try her hand in the Chocolate industry, and although Chocolatebuzzz thus far lacks a storefront that should not stop anyone from chancing an order.

Cooking from a commercial kitchen, the past three years seeing business grow through farmer’s markets and word of mouth, it is from a collection of seasonal and signature flavors that customers are encouraged to choose, all fifteen current options just as delicious as they look.

Ingredient-focused, Cacao Barry or Valrhona forming the base of Bonbons, Truffles, Turtles and Bark, it is immediately after unboxing that the Elrod’s artistry is apparent, each bite through polished surfaces releasing balanced flavors ranging from tangy Passion Fruit to spicy Hot Chocolate.

Including single origin selections for purists, plus “Black Forest Cherry Jam Cake Ganache” that puts the average “Cordial” to shame, fans of Caramel will undoubtedly be taken by Chocolatebuzzz’s impeccably well-balanced “Pink Himalayan Salted Caramel,” though the holiday version spiked with Eggnog is also pretty great.

Not forgetting “Hazelnut Dream Cinnamon Ganache,” nor S’mores tilted towards Nutella, fans of Coffee should double-down on Dark Chocolate Cappuccino that starts bitter but dissipates sweet while Mint lovers will have a difficult time deciding whether “Dark Chocolate Candy Cane” or “Mint Forest Brownie” is best.

FIVE STARS: While this writer personally gravitate to Dark Chocolate and Single Origin tablets, Bonbons and Truffles certainly have their place, and with Chocolarebuzzz Denise and Levi Elrod have created some truly wonderful bites that taste even better than they look.

RECOMMENDED: Dark Chocolate 63% Illanka, Hazelnut Dream Cinnamon Ganache, Pink Himalayan Salted Caramel, Black Forest Cherry Jam Cake Ganache, Milk Chocolate Peanut Butter, Dark Chocolate Cappuccino.

AVOID: Personal preference veers from Passion Fruit, but even it was very nicely balanced.

TIP: Seasonally available at the Downtown Summerlin Farmer’s Market on Saturdays from 9am-2pm.

With David Chang a virtually ubiquitous name amongst “foodies” since 2004, both Ramen and Bao owing the Momofuku empire a debt of gratitude for their prevalence on menus across America, Majordōmo Meat & Fish hopes to bring the success of its Los Angeles location to guests visiting The Palazzo.

Rare to attend “Grand Opening” parties, Saturday offered a unique opportunity to see what David Chang has done with the old Carnevino space, and having first experienced the Chef’s food a decade prior inside the cramped confines of Noodle Bar one can only marvel at how far he has come.

Obviously not a “review,” some 400+ people mingling with Beverages and Bites while a DJ played loud, diners can expect everything from small bites to sharable Entrees with an eye towards #instagram, all while Tastys sliders occupies a space across the hall for modestly priced Burgers on-the-go.

They say the best Restaurants are the ones you want to revisit even before leaving, and with friends in town the opportunity to dine at Bardot Brasserie again proved too tempting to resist, a table of nine taking their seats prior to noon for a feast from the hands of Chef Josh Smith and his team.

Now the twentieth visit to Michael Mina’s first foray into French Cuisine, an unmitigated success thanks largely to his choice of executive Chef, it was once again after a podium greeting that guests were led past the grand bar to seats in the center, familiar servers circulating and the place seeming understaffed for the very first time with nearly every seat filled save for a few on the periphery.

Chatting over the din, Cocktails in hand for several plus fresh squeezed Orange Juice for others, it was not long before Bardot’s Fruit Plate arrived with plump Berries and Frozen Yogurt, those not wanting to fill-up too quickly passing on sugared-Donuts made of Buckwheat but nonetheless succumbing to warm Baguettes with Butter and “Everything Brioche” offered as a delivery mechanism for Acme Smoked Salmon, Chive Mascarpone and Condiments.

Moving next to Bardot’s classic Foie Gras Parfait, several guests previously inexperienced with Duck Liver finding the luxurious spread far more agreeable than anticipated, it was as a beta-test that Josh also sent out his Foie Gras “Butter” concept, a Mi Cuit preparation wrapped in White Chocolate that looks and tastes almost ready for prime-time, though a thinner shell or thicker Toast will be necessary to ensure it is spreadable.

Continuing with a King Crab & Endive Caesar, both it and the recently added Maine Lobster Scramble going over well with omnivores and a pair of pescatarians, it was after every bite of each was gone that attention turned to the Hunter’s Waffle, one guest dubbing it his favorite bite of Brunch and the Sauce Maltaise seemingly smoother and brighter than ever.

Always finding it hard to get excited over an Omelette, no matter how proper and fluffy, suffice it to say that the “Bardot Breakfast Sandwich” benefits just as much from softly folded Eggs as it does from the housemade Sausage or Muffin, while the Hash Browns served with it and a beautiful Quiche Loraine are far from the “average” Breakfast Potatoes.

Not about to miss famous French Toast, two thick wedges arriving simultaneously with a jumbo quenelle of Vanilla Cream and Almond Brittle on each, those who previously thought Bardot’s Macaron “too rich” will be thrilled to find it lightened by way of Gianduja Chocolate and a bit of Citrus.

At this point finding almost every guest waiving their napkin like a white flag, at least until spiraled Brioche arrived with melted Nutella and Nuts, Chef Smith applied the finishing touches by way of Baked Alaska, the tableside fire extinguished by Passion Fruit that finds its foil in roasted Pineapples and Banana Rum Cake.

FIVE STARS: Never shy to sing the praises of Bardot, or Chef Josh Smith, it was once again with friends in town that brunch was enjoyed at North America’s best Brasserie, and although the Restaurant was jammed-packed everything was precisely as expected and delicious as ever.

RECOMMENDED: Foie Gras Parfait, Hunter’s Waffle, Bardot Breakfast Sandwich, Maine Lobster Scramble, French Toast, Baked Alaska, Chocolate Macaron.

AVOID: N/A.

TIP: As above, Foie Gras “Butter” is not yet on the menu, but follow @bardotjosh for these and other daily specials.

Rapidly approaching 24-months as a separate entity from HeXX, new furniture and a reformatted menu attempting to place more distance between adjoined spaces, Friday evening found Alexxa’s Bar at Paris Hotel & Casino fairly quiet from 6:00pm until approximately 8:30pm while seven diners enjoyed twenty-three shared plates ranging $4.95 to $14.50.

Chosen for a casual celebration, one local and out-of-towners including two vegetarians comprising the group seated at an oval table, it was after check-in at the podium that everyone was situated, a few Drinks in hand joined by addictive Almonds and whole Olives lightly kissed by Citrus.

Nothing more than a memory of the candy store which once inhabited the space, a DJ beginning to set up at nine o’clock soon to replace overhead iHeartRadio, additional dishes from round one included Charcuterie accompanied by reduced Blueberries and top-shelf Honey, while a Quinoa Salad and pureed White Beans from the HeXX menu were equally enjoyable to vegetarians and omnivores.

Best described as global small plates, entrees removed in favor of items like whipped Ricotta Cheese served with far too little Bread and fresh Salads, it was mostly using Tortilla Chips from HeXX’s Baked Spinach Dip that Queso Fundido was consumed, the kitchen’s expectation apparently either that each slice of Bread be spread two-inches thick or that guests will enjoy eating spoonfuls of coagulating Meat and Cheese.

Also missing the mark with $10.50 Burrata, the Bread again an issue as “Twisted Brioche” was only edible on the outside edge surrounding its over-worked center, suffice it to say that Mac n’ Cheese deemed “Spanish” was only that in name while Argentinean Kabobs were far better from the grilled Meat to spicy fried Potatoes.

Surprised to see Octopus on the menu, let alone a sizable portion with nicely cooked Beans for just $12.50, a better alternative to the Alexxa’s Macaroni is HeXX’s thick and creamy Risotto which goes nicely with Meatballs made from Lamb and spices that reminisce of Turkish cuisine.

Rounding out savories with Sliders, Pork Belly on Bao comparing favorably with Momofuku’s but inexplicably more expensive, it was after enjoying Beef, Bacon and Gouda that Dessert arrived, Chef Miranda Prince’s Blueberry Corn Cobbler from next door still one 2019’s most memorable bites while Carrot Cake served with a candle in celebration of one diner’s Birthday was exactly as it should be with a moist and aromatic Sponge topped by tangy Cream Cheese Frosting.

At this point seeing most diners over-sated, but not too full to taste Olive Oil Ice Cream that eats light as Cool Whip, those seeking something “not too sweet” should not miss the Amaretti Cookies while Coffee Cake and Alexxa’s Peanut Butter Blondie are far more indulgent, the former in particular as a result of the lightly-salted Hazelnut Butter.

THREE AND A HALF STARS: As ownership continues to struggle with separating Alexxa’s Bar from HeXX this most recent attempt feels like a step backward, the menu seemingly designed by an international committee only barely held together at times by Chefs Buscaglia and Prince while prices range from generous to gouging with no obvious pattern.

RECOMMENDED: Marcona Almonds, Quinoa, Argentinean Kabobs, Braised Octopus, Prime Beef Sliders, Amaretti Cookies, Carrot Cake, Coffee Cake. Risotto and Blueberry Corn Cobbler from the HeXX menu, as well.

AVOID: Queso Fundido is a big fall off from June’s version, and still with far too little Bread. Same with the Ricotta. No one wants tablespoons of Cheese. Others had strong opinions regarding the Meatballs and Macaroni being ruined by overcomplicating things, and those complaints are valid. “Twisted Brioche” beneath the Creamy Burrata needs to be re-thought, or at least baked more carefully.

TIP: Open daily from 9:00am to 6:00am. Items featured start at 4:00pm as Alexxa acts as HeXX overflow until then.

For anyone who has spent time dining around Spain the idea of “going out for Tapas” in America is fraught with issues of cost, quality and veracity, but since 2018 Las Vegas has benefitted tremendously from the opening of EDO Gastro Tapas & Wine in the plaza on the corner of South Jones Boulevard and Spring Mountain Road.

Inspired by Catalonian traditions, Chef Oscar Amador Edo’s upbringing in Barcelona gifting him with a respect for diverse Ingredients and an ability to craft poignant bites that highlight rather than hide them, it was as a party of seven that guests were accommodated along a banquet near the window, GM Roberto Liendo charged with creating a Menu Degustacion including both regularly offered items and nightly inspirations.

An acronym for “Extra Day Off,” though EDO itself is open from 5pm until 11pm daily, it was with the Restaurant’s other 34 seats full by 7:30 on a Tuesday that things were underway quickly, a Cocktail of Gin, Stonefruit and Citrus pairing well with vibrant Gazpacho as well as a crispy Tuile topped with Tomatoes, Crème Fraiche and Caviar.

Weaving traditional to modern in a manner not dissimilar from Jose Andres or even the Adria brothers, imported Ibérico and Anchovies presented simply alongside crispy Bread from Spain, it was with Asian and South American influences that Oysters and Tuna arrived, followed by EDO’s signature Montadito featuring a puff of smoke surrounding Salmon, Honey and Cream Cheese.

Happy to challenge first timers with Chef’s family recipe for Chicken and Rabbit Pate, a smear of Tomato Jam un-required but welcome, it was in the “Catalan Caprese” that more timid diners found respite, at least until a roasted Bone arrived filled with perfectly cooked Marrow beneath Ibérico Marmalade.

Once again thrilling with their take on the Spanish Bikini, Paprika-kissed Meat enlivening thin and crispy “Grilled Cheese,” suffice it to say that Edo’s Croquetta outpace Bazaar Meat or Jaleo by a landslide with or without Lobster, while labor-intensive Patatas Bravas look and taste better than any experienced from San Sebastian to Barcelona.

Slightly missing the mark with “Scallops con Jamon,” the Adductor lost amidst Pil Pil that seemed too thin, dinner was immediately back on track with grilled Octopus that stood up to a bold Sauce of its own, while the “Rossini Butifarra Burger” ate like Spanish Sausage Wellington sitting next to unctuous but airy Foie Gras Espuma.

Surprising some with larger plates despite diminishing capacity, two Wine-roasted Lamb’s Necks falling from the bone to top Flatbread served with Gyro-esque condiments, fans of Sea Urchin will not be let down by Oscar’s Arroz Meloso Con Uni, while Ibérico Pork Loin atop pickled Fennel rivals any “Secreto” served on Las Vegas Boulevard at half the price.

Offered more savories if anyone was still hungry, even the most steadfast appetite knowing when to say when, Dessert arrived in three parts, the Granita light and Custard luxurious while texture-modified Tomatoes, Fruit and Nuts successfully defied convention to the delight of everyone in attendance.

FIVE STARS: Fully aware that some will suggest a hometown bias for even suggesting such a thing, suffice it to say that having been to Jaleo and TICKETS for more comprehensive experiences than most (plus plenty of Pintxos and Tapas from Barcelona to the Basque region) not one individual experience outpaced what Chef Oscar Amador and his team served across 21 courses on Tuesday. Perhaps not as “pretty” as the Michelin starred Celebrity spots, flavors came through bold and balanced whether traditional or modern, with not one bite less than delicious. Paired with service led by Roberto Liendo, add this to the “world-class” list in Las Vegas.

RECOMMENDED: Caviar Rosette, Montadito, Patee en Escabeche, Roasted Bone Marrow, Bikini, Brava Potatoes, Rossini Butifarra Burger, Lamb Neck a la Riojana, Flan, Nixtamalizated Cherry Tomatoes.

AVOID: Scallops con Jamon.

Owned by the Landry’s (or Morton’s if one trusts Google) Restaurant Group, and indiscreetly targeting tourists with reasonably authentic Italian fare at sensible prices, it was after a confusing exchange at the hostess stand that seating was offered inside or on the “patio,” the latter selected largely due its view of the television but likely a mistake for anyone who doesn’t want to be treated like a visitor from the boonies with little-to-no dining experience.

Managed by John Dakin, and recently switching top toques from Jose Navarro to Tylor Urias, guests visiting TREVI will find the Restaurant situated near a mock-up of the eponymous fountain, Gucci and Armani within eye-shot and the menu covering a wide range of plates both unique and traditional.

Perpetually a high-volume space, both literally and figuratively in terms of noise and covers, it was with two sizable glasses of Prosecco in hand that an order was composed, the sweet sparkler well-priced at $12 a glass while complimentary Bread with seasoned Dip and “Baci di Pancetta con Polo” were each enjoyable right down to wiping up the last bits of Marinara.

Less impressed by “Spedini Saltimbocca,” overcooked White Meat in this case requiring excessive chewing while the warm Salad was fine, those looking for a sharable Appetizer may wish to check out the fried Eggplant, a few bites too crisp but the majority irresistible with or without Tomato Sauce.

Opting for Pastas as entrees, the Ravioli fairly basic though TREVI’s rendition of Vodka Sauce is respectable, those seeking added richness should consider ribbons of Pappardelle topped in housemade Meat Sauce and a Meatball that didn’t necessarily seem “Jumbo,” but rather a bit dense as though it had been worked too long.

Requesting Coffee before Dessert, while the lady preferred a second glass of Wine, it was long after the double Espresso was gone that two substantial portions were delivered, the Cheesecake competent but no better than many others while “The Ultimate Sundae” featured lots of Bananas and Whip atop smooth Gelato that is housemade with surprisingly natural flavors.

TWO AND A HALF STARS: Perhaps struggling during prime-time, but more likely the result of a place that is happy to rest on its laurels with guaranteed curb-appeal to tourists, TREVI Italian Restaurant’s Food was its only saving grace on a Saturday night when everything from check-in onward assured guests that they were nothing but a number.

RECOMMENDED: Melanzane Fritte, Baci di Pancetta con Polo, Banana Veneziana.

AVOID: Spedini Saltimbocca

TIP: As of 12/18/19 Google still lists Morton’s as the owner while the website, which still lists Jose Navarro as Chef (despite departing in July,) suggests Landry’s. Attention to detail is clearly a priority.

Hypothetically, let’s pretend one is single, male, without children and not looking for a gym that costs more than some family’s monthly rent – why exactly is this individual at Tivoli Village? Until June of 2019 the answer was probably “lost,” “hunting for cougars,” “in need of a lawyer” or simply bad taste. That all changed when James Trees opened Ada’s, and now the Chef’s spin-off of Esther’s Kitchen is open for Brunch.

Recently celebrating six-months, and resembling Chef Trees’ mega-successful Arts District spot more by the day, it is from complimentary parking that guests are invited to enter the pleasantly decorated space surrounding an open kitchen, Chef de Cuisine Dylan Jobsz found working side-by-side with James on this particular day during which nearly every seat was full by noon.

A good place to gather a group of like-minded diners, the menu spanning everything from Eggs to Sandwiches, Pizzas and Pasta, it was along a wood-lined wall of bottles that seven guests were seated, the outdoor patio even doing well in early December while General Manager Sonia Stelea kept an eye on her well-trained front of house.

Equally well-priced as Esther’s Kitchen, no item more than $16 including several that can easily be shared, it was beginning with locally roasted Coffee from Vesta and fresh squeezed Orange Juice that Brunch got started, Dylan’s Sourdough forming the base of Toast and housemade Jam with Almond Butter brightened by Lemon Zest.

Creating a sense of openness with bright colors and high ceilings, the soundtrack including a lot of mid-tempo rock playing unobtrusively above, it was with the linger of Citrus still on the lips that Ada’s Dutch Baby was presented, a price $1 less than that of Rooster Boy Café yielding better texture and nearly twice as much Food while the Duck Benedict with delectable Duck Fat Hollandaise rivals Bardot’s Hunter’s Waffle for $16 compared to $25.

Never skipping Esther’s Polenta, the same creamy goodness offered during Brunch at Ada’s with Eggs, Mushrooms and a crispy Cheese lattice, guests should make sure not to overlook “Eggs + Sauce” just because it sounds simple, since as a result of high quality Ingredients the flavors and diverse textures are nothing short of fantastic.

Taking a calculated risk with the Croque Madame, imported Italian Ham and Tomato Bechamel eating somewhere between the classic French Sandwich and an afterschool special of Grilled Cheese dipped in Soup, there is no risk entailed in ordering any of Ada’s Pastas, the Cacio e Pepe reference standard while there is no better Pesto to be found in Las Vegas than that which slicks the Gemelli.

Offering far fewer Pizzas than when it opened, and less esoteric options as well, it is fortunate that the Calabrian with ‘Nduja remains while those seeking a vegan-friendly choice should strongly consider the vibrant green Falafel Wrap…or briefly give up their thought that appropriately milking a Cow is somehow bad for it and indulge in a custard-soaked slice of Sourdough cooked golden and topped with Salted Caramel Best Ice Cream.

FIVE STARS: Although much has changed since Ada’s opened its doors at Tivoli Village, the Restaurant in a much-maligned space finally seems to have found its audience, and by taking an Ingredient-focused approach to Brunch James, Dylan and team have created what very-well may be Summerlin’s first true daytime weekend destination.

RECOMMENDED: Toast + Jam, Dutch Baby, Gemmelli Pasta, Duck Benedict, Polenta, Eggs + Sauce, Croque Madame, Calabrian Pizza, French Toast.

AVOID: N/A.

TIP: Brunch begins at 10am on weekends and runs till 3pm. Parking is usually available on the street outside, but if not the most convenient access to Suite 120 offered by underground parking and the second escalator/elevator from the Rampart entrance.

Although most of The Palms’ recent headlines have been surrounded by Kaos, Las Vegas’ best fine dining story going into 2020 could very well be Chef Daniel Ontiveros’ hiring at Scotch 80 Prime, and on Thursday evening the man with stints at Comme Ca and Bouchon on his resume showed precisely why many in-the-know Chefs have been singing his praises for some time.

A part of Sin City since late-Spring of 2018, longtime N9NE Steakhouse Chef Barry Dakake’s departure in March making way for a culinary team now led by Daniel, Steve Barr and Pastry Chef Tammy Alana, Scotch 80 Prime resides on the resort’s east end, and just as during past visits the service remains equally impressive as the Restaurant’s enviable art collection.

Touting Basquiat and Haring, plus an “impossible-to-find” Whisky collection, it was inside a comfy alcove that an almost entirely re-vamped menu was perused before asking Chef Ontiveros to cook Carte Blanche, a glass of bubbly setting the scene and pairing nicely with Peewee Potatoes generously topped in Caviar.

Not at all basic with Bread service, memories of Tammy’s top-tier basket from Alize bested by sugared Brioche and black Rolls with Cheese, dinner continued with two styles of Fish, traditional Tartare enlivened by Harissa and salty Roe while Yellowtail came in four individual shot glasses with subtle heat and a hint of Mint.

Continuing with Shellfish, an already exquisite bowl of Bisque upgraded by early season Black Truffles, suffice it to say that in a city with many Shellfish Towers none achieve the heights of Scotch 80 Prime’s version, a tableside flambé extinguished with what can best be described as Scampi Sauce and the resultant Crustaceans across-the-board delicious thanks to Butter, Garlic and smoke.

Torn between saving room for Entrees and sopping up every last drop of the tower’s Sauce with Bread, it was with good fortune that the former was selected, the American Wagyu from Washington almost as smooth and buttery as imported A4 while Daniel’s Lamb set-up is delicious and seasonal with particular attention warranted for the Sweet Potatoes.

Mindful to not overindulge in sides, though the Mashed Potatoes rival Robuchon’s while Mac & Cheese is anything but boring, it was with the arrival of a tableside cart that Dessert was announced, the “Fire & Ice” Banana Split always a head-turner that is big enough to share, though the trio of Sorbets is equally enjoyable and ideal for vegans as well as those with smaller appetites.

Replacing Summer’s Rhubarb Crostata with Apple, the Pastry on-point regardless of its contents, those seeking something more #instagrammable should gravitate towards either “Scotch & Cigar” or Chocolate Layer Cake, but unlike other Steakhouses who sacrifice substance for style, these two Desserts are just as delicious as they are fun to look at.

FIVE STARS: Although Scotch 80 Prime debuted strong in May of 2018 the menu had been slow to change, but on Thursday night a new era was witnessed attesting to a gifted kitchen primarily concerned with flavor, while tableside presentations add rather than distract from a dining room and service that rank amongst Las Vegas’ best.

RECOMMENDED: Bread Basket, Golden Osetra Caviar, Hamachi Shots, Mesquite Fired Crustacean Tower, Potato Puree, Colorado Lamb Chops, Scotch & Cigar, Chocolate Layer Cake.

AVOID: Not technically an “avoid” but music ranging from Bob Seeger to 50 Cent seems louder the closer one sits to the bar area, so those seeking a quiet night may wish to sit along the walls.

TIP: The Tableside Fire & Ice Banana Split recently took seasonal inspiration with Eggnog and Christmas Cookies, an idea likely to continue with seasonal changes going forward.

Grace Meat + Three, St. Louis MO

Grace Meat + Three

Sourdough Beignets, Powdered Sugar, Lavender-Lemon Curd, Blueberries

Quarter Fried Chicken, Heirloom Corn Waffle, Maple Syrup, Honey Butter / Skillet Cornbread / Heirloom Corn Grits, White Wine, Bay Laurel

Grace Banana Pudding, Paw Paw Custard, Benne Seed Wafer, Toasted Meringue

Salted Honey Custard Pie, Dulce de Leche, Local Honey

Owned by Chef Rick Lewis, and featuring upscale Southern cooking with counter service, Grace Meat + Three has earned its fair share of accolades, though based on a midday Sunday visit in December the Food generally seems overpriced and unbalanced.

Located at 4270 Manchester Avenue, 11a-8p hours from Wednesday through Sunday featuring separate menus for Brunch, Lunch and Dinner, it is upon entry that guests see the Restaurant spread left and right, the overhead menu not entirely accurate – though apparently neither is the tri-fold near the door considering the difference between what was served and what was printed.

Taking orders from a central counter, a fact not obvious to first timers including a family who went and sat down before realizing their error and joining the queue, it was after inquiries regarding portion sizes and Grace’s “Daily Bread Puddin” that a three part order was composed, Sourdough Beignets described as coming with “Persimmon Mousse + Pickled Pears” the first disappointment as they arrived doughy and flavorless with Blueberries and floral Citrus in a perfunctory pan.

Waiting perhaps ten minutes for course two, juicy Fried Chicken performing well atop a thin Waffle while buttery Cornbread outpaced Grits that needed more salt and less Herbs, Desserts sold for $8 each proved rich but small, the Pudding eaten on-site an enjoyable riff on the classic while Salted Honey Custard Pie taken to-go was visually compromised and mostly just sweet.

Café Osage, St. Louis MO

Café Osage

Buttermilk Biscuits, Ricotta, Honey, Bee Pollen

French Toast, Maple Mascarpone, Orange, Oat-less Granola

Carrot Cake, Graham Frosting

Part of St. Louis’ Bowood neighborhood, Café Osage occupies a quarter of the garden-store at 4605 Olive Street, and despite service that can kindly be called “clueless” the breakfast/lunch concept shows well thanks to housemade fare featuring mostly organic Ingredients and several items made from Fruits and Vegetables grown on-site.

Open from 7:00am until 2:00pm on Weekdays, and letting employees sleep in an hour later on weekends, it is from an unpaved lot next door that guests access the front door after passing by outdoor gardens, the dining area located up a few stairs where hostesses stand to confirm reservations.

Allowing also for walk-ins, though seats were largely accounted for by nine o’clock on a rainy Sunday, it was after perusing both specials and an all-day menu that a young server arrived, the question as to whether he was hung-over or just lazy never answered as the majority of his time was spent lollygagging at the pass rather than tending to tasks like refills or presenting plates that even saw him state “your French Toast will be out soon” approximately ten minutes after it had already been eaten.

Fair priced for the Ingredient quality, Chef Scott Davis taking inspiration from the Osage Orange Trees which surround Bowood Farms, Brunch began with three-bite Biscuits sandwiching Ricotta Cheese and a small drizzle of Honey, the Buttermilk prominent throughout flaky layers that could be further adjusted to guests’ tastes with housemade Raspberry Jelly.

Waiting only a few minutes more for the aforementioned French Toast, all while trying to ignore the incessant banter of two twenty-somethings within earshot, fans of the Breakfast staple will be excited to know Café Osage’s Brioche comes thick-cut with lots if Custard and a good seer, while Citrus, Syrup and housemade Granola add complexity matched by the thick Frosting atop a particularly aromatic slice of Carrot Cake.

Rooster (Locust Street,) St. Louis MO

Rooster

Ham & Jam Biscuit, Fontina Cheese, Overeasy Egg / Brunch Burger with Breakfast Sausage, Overeasy Egg, Fontina Cheese, Rooster Mayo / Breakfast Potatoes

Finnish Pancake, Butter, Housemade Strawberry Jam

Described as a “European-style urban Café,” Rooster is known for long lines across two locations in St. Louis, an early arrival during inclement weather still finding plenty of patrons present while Food delivered by pleasant servers was well-priced and enjoyable.

Touting Crepes and Sandwiches beginning at 7:00am on weekdays and 8:00am on weekends, it was by foot that the location at 1104 Locust Street was approached from free Sunday Parking, a hostess suggesting seating in the smallest of three rooms with shabby-chic décor and blues playing from the ceiling.

Owned by Restaurateur Dave Bailey, with lots of branding and “EAT LOCAL” shirts (that were sold-out in every size but XL) throughout, it was after lengthy perusal of items both sweet and savory that a two-part order was placed, management graciously allowing a small edit that the kitchen failed to execute correctly, though the result was still good.

Waiting perhaps ten-minutes while sipping water, seats beginning to fill briskly around nine o’clock, it was with the two-top nearly full that first bites were taken of dueling Biscuits, the “Brunch Burger” made correctly with herbaceous Sausage balance by Egg and Cheese while the “Ham & Jam” requested in place of a second oddly lacked Jelly with spicy Mayo served in its stead.

Unmoved by Breakfast Potatoes, but happy to see nicely-layered Biscuits with plenty of Butter, dish two featured a Finnish Pancake rather than American or French versions, its oven-baked finish yielding caramelization on both sides of a Custard-soft center without a lot of sweetness that made for an excellent pairing with either Maple Syrup or housemade Strawberry Jam.
