Although Chef Andrew Fairlie passed away in 2019, after a long battle with cancer, the flagship Michelin 2* Restaurant tucked away in Gleneagles Hotel still bears his name and still serves Food befitting his history.
Now toqued by Chef Stephen McLaughlin, who joined Fairlie’s brigade at 17 years old followed by 26 years at his side, guests will find the Perthshire resort immaculately groomed across 850 acres with the building itself rustic stone but certainly not lacking for modern amenities.
Perhaps the last champion of Nouvelle Cuisine, a pedigree including the Roux Brothers and Michel Guerard shown across eight courses flanked by extras, it is beneath high ceilings that posh tables await draped in white linen to match well-heeled clientele.
A la carte or tasting, the latter begun with a flurry of snacks including Venison, Foie Gras and airy Saffron Soup, starters such as a truffled Tomato Tart and Steamed Crab look simple yet taste fresh thanks to quality ingredients and skilled cookery.
Led by a formal but informed staff, this particular night seeing the resort as host to a large golf tournament complete with bagpipes, Halibut in Fennel Puree tastes of Summer prior to stuffed Squash Blossoms and Scottish Lobster in Citrus Butter that would have not been out of place at Les Prés d’Eugénie.
Playing is safe to finish with Lamb, a simple Herb Crust and light Jus allowing the Protein center-stage, Desserts begin with Lemon in textures before a deconstructed Strawberries and Cream Parfait, Coffee and Mignardises.
